i know many "african-americans" who resent being called that because the culture they were raised in was black america, not africa. i would venture to point out that a lot of this "pc" language is actually invented and widely used by people not of the ethnicities in question...meaning, white people use this stuff, mostly. in fact, on one of the posters advertising travel abroad, one of the quotes says, "valencia was the first time i wasn't just a hyphenated american." i can understand an immigrant from italy identifying as an italian-american. i have a harder time understanding a 10th generation american whose ancestors were from italy identifying as an italian-american. i also really have a difficult time seeing what this has to do with practicing the cultures involved, or why that's bad, and why you seem to see all cultural practice as "shoving it down our throats." but then again, i don't get so frustrated about it. i also get lots of benefits. the people who work at many of the restaurants i frequent have a difficult time speaking english sometimes...but they cook damn good indian, tibetan, and nepali food. and they're nicer than the people at the american restaurants a majority of the time. i'll take that over perfect english and complete assimilation to "american" culture any day. :P take a deep breath already.
