Okay, I'm a little late getting it but I finally did. I think I'm gonna like it.

I made some really good bread from scratch last night around 11:00. It was so nice to not have to go to a store for those 2 and 3 day old feeling breads they call fresh.

The mixer really did a good job on, well, mixing the dough. I can see a difference in the quality of the mix and the loaves in general. Not to mention it cuts down on the time and the wear on my joints. (Not a spring chicken anymore..Everything hurts it seems)

I plan on buying as many attachments as I can buy also. I love making my own pasta..what a difference in taste that is from the store-bought.

They also have a meat grinder, grain mill, sausage maker, food processor and a number of other great items.

The only worry I have is the strength of the motor. I had half the bowl filled with dough and it seemed to put a strain on the motor and slowed to 50% of the original speed. I suppose that's bound to happen a little but I worry about that happening over the long haul and burning the motor out.

Anybody had one long term, if so, any problems?

I'll do that. I'm sure it's fine, it just surprised me how much it lagged..Mainly because this thing could be an anchor for a cruise ship.

Sadly I am going to have to break down and get a food processor.  My hands just can't do all of the chopping and prep I used to.

As long as your not trying to run a bakery and make 50 loaves a day it should be fine.  Just shut it off if you sense it over heating.

As long as the processor was intended to mix bread dough, you should be fine. Bread dough is some of the hardest stuff to mix in a processor, b/c really it should be kneaded, and that action is hard to simulate.

I don't bake bread as often as I used to b/c the kneading hurts my back. So I will probably break down and get a bread machine.

Icarys, it depends upon which model you got. If you have the time, go to Amazon.com, do a search of Kitchenaid mixers, and read the reviews of the various models.

I just recently ordered the Pro 600.........all metal guts, because I cook A LOT and plan on putting it through it's paces.

The only thing I've heard bad about the attachments is that the pasta making one is kinda worthless. That being said I got a pasta rolling machine for that job.

Will let the mixer make the dough but will continue using the above for the actual pasta making.

Back when I was taking cooking classes I had a lot of friends who baked like mad I had a ridiculous number of friends who also all had stand mixers.  Be careful with some of the attachments and your motors!  Two of the ladies actually burnt out their motor on their new stand mixer (meat grinder!) and I had heard some of the newer attachements are no where near as handy as you'd think they would be.  Its been about 3 years so maybe models have changed but I remember the ice cream maker being terrible (workable but less effective then a cheaper ice cream maker at half the price which she ended up buying anyway) and the pasta maker being more or less useless. 

I haven't found too much I can't tackle with the normal attachments on my mom's old kitchenaid mixer or my food processor so I haven't really bothered to see about the attachments that would be compatible with mine (since I don't want to lug it out to shed, chop or grind.)  I have owned a grain mill though - Icarys those things tend to make a lot of dust in my experience!  I wouldn't want to be lugging my mixer out into the patio or garage (damn thing is heavy) and that dust gets everywhere.  If you really want a grain mill and you're willing to spend $150 you can find better and easier to use grain mills out there.

I've had a high end kitchen aide mixer for better than 10 years. The accessories I have, meat grinder and pasta roller/cutter, work fine. I wouldn't make bread, pizza or pasta dough without it.

If the dough is very stiff it can slow the mixer down and it should be checked for overheating.

That's probably the issue. Mine is 275 watts and yours is 575. I don't plan opening a bakery or feeding a small army but I do a good bit of cooking as well. The Pro 600 would no doubt handle whatever I threw at it and snicker.

I think I'll take this one back. I hate to do that but I want something that's gonna last and not just a get by option.

Edit: I'll do some research on the pasta attachment. I've heard it was okay, I suppose you'd get that no matter what.

I thought of doing the manual thing and it would save power when I move but I love the idea of having all of those attachments and being able to use one machine to do it all. (For some reason LOTR popped into my head while typing that.. :-] )

Yeah I bought an older "antique" one awhile back as a backup in case I need to save on electricity when I go off-grid.

I think I'll add the pasta maker Lat mentioned to that as well.

I love my kitchen aid for bread dough more then I do my bread maker (which I actually gave away...) but they serve slightly difference purposes I think.  IMO bread makers are great for making bread when all you want to do is dump it in and walk away and come back hours later to cooked bread.  The downside to this is if you completely walk away your bread will bake with the paddle in it leaving a hole.  This means that ideally, even though you "dump and go" you still have to come back within a particular time window to dig your paddle out before it bakes.  (This is really what you are supposed to do from what I was told... after I bought it.  To me if I have to watch my bread maker it kind of defeated the purpose of me buying it to an extent.) I ended up just using my kitchen aid to mix my dough instead most of the time (which really in most recipes is also very "dump and go")  except you have to take it from the bowl to the pan, and make sure you take the pan out of the oven.  I love my Mom's hand me down kitchen aid, it really is a great multi-tasker in a lot of ways and it helps me do a lot of things I wouldn't be able to do with my hand issues. 

The bread machine fail was actually what really got me into baking.  You could really love the bread machine idea, a lot of people really do!  (I gave away my machine to someone and it made them very very happy.)  I know a few people who use them just to kneed dough (but it seems like such a space waster for that.)  But I really recommend doing your research and thinking about how you are really going to use it.  I could have save myself almost $200 and a good bit of cabinet space had I thought out the logistics of the whole thing.

My mother-in-law had a Kitchen Aid Mixer and i was thinking i would buy one also. I was with her one day when she was "doin' the dough" and the mixer did indeed slow way down. When i commented on it she said it was supposed to do so, and too high a speed would add too much air to the dough which would interfere with the rising process (or something like that)

When she was done i helped her clean it and that KO'd any desire for one of my own. Instead i bought a bread machine and LOVE it!!!!

Measure, dump, and turn it on. That's all!!

Well, thats all with the very basic model that i have. You will find a ton of recipes on-line for different types of breads. My personal favorite is Rye...i love the way it smells when baking.

My stand mixer is about 50 years old...it was my grandmothers and has outlasted the one my mother bought less than 20 years ago. Sadly, most of the attachments are long gone and I recently broke the large mixing bowl...sometimes I think it would cost less to purchase a new one. As for bread makers...I have one that leaves a hole about the size of 1/8 the loaf so I can deal with that; I've seen some that leave holes through most of the loaf. I'm not much of a cook, so the idea of "dump and go" is very appealing. I've even taken the bread maker to work and given my clients a real treat--some of them have never had anything besides normal sliced white or wheat bread.

I expect it to do that a little, once resistance was placed on it but I guess, since I've never owned one, I thought it was a might much.

I'm betting Lat's doesn't back off like this one does so I have a choice I suppose. Buy the larger wattage one or take it easy on the model I have. Hers is $132 more but better quality, since I'm a quality seeker, I'll most likely go with her model.

Bread makers are cool and all but I like the experience of each individual stage. I'd prefer making it by hand all the way from the grains to the baking and everything between but as I said earlier, that's beginning to hurt more as I get older. I at least know I can do it in a pinch if the power goes out.
