Greetings all,

I know there are a number of people who love to cook on this forum and I've always enjoyed our cooking chats.   I am looking for something new to do with the squash coming out of the garden.

I'm NOT looking for casseroles, fried/ cooked in oil, grilled, or broiled.   I'm trying to come up with a steamed, boiled, or a fondue boil that is nicely seasoned.

I make a steamed squash with onions and often season with garlic salt, pepper, etc. after cooking.   It's very good, but I'm thinking there's gotta be some form of pre-seasoning or beef broth boiling that would give a different flavor.


I'm open to all ideas and suggestions.   Be they recipes you've tried or something that just occurred to you.

if squash is what I think it is... some pumpkin variation... I would give you a few pie recipes, that are common here in Grece... both dessert, and snack pies... but what you need, is far from my cooking skills. Unless, and this is theoretical, you boil the squash until it's about to dissolve... seasoning could have nutmeg, some mild paprica, black pepper... salt.. then drain the water, add some milk, some soft cheese, and stir-boil, until it all melts together... be cautious on the salt, as the cheese will provide some of it...
Again, this is purely theory, and it might end up inedible, so... try at own risk

What you describe would work quite well with butternut squash which is a late season squash and has a similar nature to pumpkin.

I'm working with summer squash which is more akin to zucchini. (Actually, zucchini is a form of squash.)

True. Here in Greece, we boil zucchini, drain them, add raw olive oil... some salt, and either oregano, thyme, or a combination of both, and vinegar... cider vinegar works well for that... and, no matter how I love balsamico, it won't work well with boiled zucchini

Add after steaming: Tahini as well as gomashio for delicious seasoning and added protein. Raw garlic far more health benefits than powdered--I grate it, same with raw ginger. Pink salt over reg way better for ya. Olive oil also added after ya cook it for max nutrition value as well as tumeric sprinkled on after. I have done a steam with beets, squash, broccoli, carrots, kale, chard and add fresh herbs have it with rice and maybe some meat or nuts for a complete meal. Make some carmelized onions to throw in if ya like a nice oniony flavor.

Bragg's amino acid really nice for flavoring, I use that on veg alot.

Mmmm food.

Irish dish (also works with parsnip: (this will work primarilly for squash where the gourd is hollow and seed suspended in the middle ... Ie  - acron, hubbard, pumpkin, etc)

Cube and boil the squash till soft enough to mash and set aside in a bowl. In a large skillet, fry yp 1/4lb of bacon and 1 large chopped onion. only let the onions begin to caramelize. drain only 1/2 the grease and then return to the stove and add the squash (you can mash it in the skillet or beforehand... It com4es out best of you only coarsely mash it in the pan). Heat till simmering and cook off excess water (there shouldn't be much).
    Serve with greens on the side and a meat main course. Irish Boiled Bacon, Daisy Ham or Corned Beef work best

I knew I'd get lots of good ideas here.    Plenty of stuff to experiment with and all of them sound good.   I'll post how it goes and please keep the ideas coming.

Cut the squash into slices, blanch in boiling water for 2-3 minutes, cool down with ice.
Use the cooking water to cook some thin linguine.
Slice turkey breast into strips, sauté with a bunch of onions and garlic to taste.
Add a can of crushed tomatoes and the squash, season to taste and toss with the pasta.

Take a vegetable peeler and peel the zucchini into ribbons. Use them instead of pasta with your favorite hot sauce. They are so thin that just tossing them with the sauce will cook them.

I usually eat most of the blossoms before they turn into squash, not being a huge fan of the end result. Otherwise, when they are small, about 6 inches, I will cut one in lengthwise wedges and grill them, or slice and sautee with other veggies and toss with pasta. If they get too big, they are compost.

Saute it in a hot pan with a little olive oil, garlic and red pepper flakes. Then toss it into some al dente pasta with some freshly grated parm for a quick meal.

Our family has a most delicious recipe for relish made out of the big zucchinis. I'm not fond of most relish, but this is really yummy!!

I didn't do squash blossoms this year, but they ARE delicious.

I will be working with the suggestions above and reporting back.   Here's what I tried today and it was good, but not as strong a flavor as I was hoping for.

2 cups water
1 bullion cube
1/4 teaspoon minced dried garlic
1/4 teaspoon mustard seeds (cracked just before cooking)

I put all the stuff together for a broth, brought it to a boil, and cooked the squash to desired texture.    It was good, but the flavors were a bit weak.

You could make zucchini muffins and cookies. They are rather good. You can also substitute them for bananas in banana bread. Or for the carrots in carrot cake.

Yes, I do realize that you did not list baked goods as a category. Perhaps it was an oversight.

This is one version. I like my Mex chix-stock-based soups with fried tortilla strips.

Sautee up the squash with some cilantro, a tiny bit of oil, some red onions, a splash of lime, and diced tomatoes. Add some roasted garlic if you like.

Cut the ends off and sccoop out the seedy center. Stuff with some mushroom risotto, sprinkle on some parmigiano slivers, and bake.

Briefly blanch, then make a salad with diced onions, cukes, tomatoes, some yogurt with cumin, allspice, nutmeg, etc. or Garam Masala.

Finely dice the squash, then use as a layer for a tortilla casserole or lasagna.

i'm a huge fan of zucchini ribbons as well. i gently saute a white fish in some lemon juice, white wine and butter and when it's done, take the fish out and quickly stream/saute the ribbons in the leftover juice. wonderful for summer afternoons

zucchini quiche

· 1 cup Bisquick
· 4 eggs, beaten
· 1/2 cup oil
· 1/2 cup grated parmesan cheese
· 3 cups zucchini, unpeeled and thinly sliced
· 1 small onion, chopped
· 1/4 teaspoon dried dill
· 1/4 teaspoon dried oregano
· Freshly ground salt and pepper to taste
· Paprika

Preheat oven to 350 degrees.
Mix Bisquick, eggs, oil and cheese in a medium bowl. Add zucchini, onion, dill, oregano, salt and pepper, mixing well. Spray or grease a large pie plate or a 9-by-9-inch square pan. Add zucchini mixture and spread out evenly. Sprinkle with paprika. Bake at 350 degrees for 30 to 40 minutes. Let rest for 10 minutes before cutting. Serves 6.
