Two words for either round cuts or london broil- slow cooker, aka crock pot. Definitely not shoe leather when done.

Thank you DomKen, you're just trying to insure I am aware of it's downfalls.

I may actually just buy chicken and cook that instead, and keep the top round, or a stew night.

Keep in mind, I know I'm repeating but its important, top round is not flank steak. cooking it like it is will have very bad results. Top round is cheap because it has little flavor and is very tough. It's a good meat for stews or chili.

Flank steak can be very tender if cut across the grain and it takes up flavor from a marinade very well. It's the usual cut found in steak tacos and fajitas as well as beef stir fries.

Do you have any cookbooks, TFTB? I recommend THE SETTLEMENT COOKBOOK and THE JOY OF COOKING, both have lots of good information on cuts of meat, and what to do with them. The print is tiny, there are no color pictures, but the reference is awesome! Our Settlement is nearly 50 yrs old and rickety but we use it all the time to look stuff up.

LadyH, I don't personally, but there's some in the house. They're more for baking and stuff, though, not cuts of meat.

The internet is a good source of information however, a google search for cuts of meat and such.

I just never do the shopping, or picking out of meats, so I have no clue what's a good sale, average sale, or crappy sale, most the time. But hey I guess if it's something you wanna eat, and it's reasonable to you, just go for it.
