Toppingfrmbottom -> is beef round london broil a good quality meat? What about pork spareribs? (9/2/2010 1:20:56 PM)

Does Pork Spare ribs have a lot of good meat on them? Or are they all largely fat and bone?

The spareribs are on sale 1.49 a pound, and the Beef round London Broil is  on sale for 1.99 a pound.

Are these good deals, average, below average or a rip off? I know how much you'd pay normally varies from place to place, so you can't accuratly judge that for my stores, but in general perhaps?

I don't care much for Spare ribs, but that is a decent price.

I do however, love London Broil. It's a lower cut of meat, but if cooked right and/ or marinated right it's very tender and yummy. I like to use a meat tenderizer, like Adolphs. Whatever amount of water it calls for I cut in half and use red wine for the other half. Poke holes in the meat with a fork, put meat in a zip lock, add marinade and let sit at least 12 hours. I periodically re puncture the meat with a fork to let the marinade get inside. Grill or broil and you have a pretty good steak.

There are lots of recipes online if you don't want a steak per se and want to do something else with it. I find it a pretty versatile meat.

PS... and 1.99/lb is a good price.

Beef round is the hind leg of the steer. It tends to be fairly tough and best used for stews and other long cooking dishes.

London Broil is flank Steak from the bely of teh steer and makes excellent fajitas and is very good (note cut across the visible grain of the meat or it will be extremely chewey).

Pork Spare Ribs are from the middle of the rib cage. Baby backs are the part closest to the spine. Spare ribs are fairly meaty and very tasty but must be cooked for a long time at a low temp to be good (BBQ).

Spare ribs at 1.49 a pound is about average I guess

Since there is no such thing as beef round London Broil no price is good. 1.99 is very low for most any cut of beef but make sure you know what it really is before buying

london broil is a cheap cut of meat that can be a great meal........... a very simple way is to put the london broil in a zip lock bag with italian dressing preferably over night, throw it on the grill, cook it to med. rare/med. (not well done unless you like shoe leather...lol.... cut against the grain of the meat into thin slices. Leftovers make great sandwiches!!

I would just talk to the butcher in the meat dept. If they don't have a butcher, I wouldn't be buying my meat there. Every cut in the place will be shipped in from someplace else, and you won't know where.

That's still not a cut of beef.

London Broil is a flank steak, from the belly.

Top Round is the top of the round, still the hind leg.

I suggest you Google both Top Round London Broil and Beef Round London Broil. I checked my freezer and there it was on the label : Top Round London Broil. Maybe it's not a cut of beef, but they sure sell it labeled as such.

I'm just going from working in a steak house.

London Broil is Flank Steak. Although I do see in wiki that top round is getting labeled as london broil in some places.

I wouldn't buy beef at such a store since they have no idea what they are talking about. You could make a top round in the London Broil style but it would be bad.

This, anything I've ever seen in the store labeled as a london broil has always been a top round roast.  I've eaten too many of those things cooked incorrectly as a kid by my mother.  [:'(]  I can't blame her really, even after researching that damn cut I've never managed to make one that wasn't like trying to eat shoe leather.

A true "london broil" or back here/east coast a flank steak is a lot easier IMO and worth the money at 1.99.   If you take a look in your average search images for both terms you'll see there is a pretty big difference in what they look like TFM (and IMO taste).

Where on earth can you get flank steak for that kind of money? I buy my meat at a local butcher here called Curtis's Market and flank steak is at least 10 dollars a pound always. That is common.

I had bruschetta today at lunch and no kidding it looked exactly like your avatar! lol. It was delicous! [:)].

DomKen -> RE: is beef round london broil a good quality meat? What about pork spareribs? (9/2/2010 7:40:48 PM)

10 a pound for flank is real high unless it is certified organic or some such. I generally pay around 4 sometimes a little less if I buy the whole thing and trim at home.

As to top round. It can be used for a lot of applications that are braised or otherwise slow cooked. I like it for chili and it makes a decent pot roast (7 blade chuck is better but sometimes bottom round is cheaper).

Should just make a cooking thread, that would be a great thread to begin...I thought of it but you can have it i'm that nice.

Meat is actually pretty cheap here in Sacramento.

The grocery chain is called food source, and it's a labor day sale.

Well thank you very much Sub Pet.

One individual thread for all cooking topics are good, I just feel they'd get so busy and fill up with chatter and banter, and crowd other things out.

Keep in mind, I know I'm repeating but its important, top round is not flank steak. cooking it like it is will have very bad results. Top round is cheap because it has little flavor and is very tough. It's a good meat for stews or chili.

Flank steak can be very tender if cut across the grain and it takes up flavor from a marinade very well. It's the usual cut found in steak tacos and fajitas as well as beef stir fries.

Adolph's is MSG, IIRC. I know Accent is. Those with sensitivity to glutamate should avoid it (note: MSG is not an allergen). Pineapple juice is a good meat tenderizer, and I think there are tenderizers with the enzyme Papain available. I use pineapple juice for my Fajita marinade.

BTW, I agree with having one thread devoted to food stuff, too. That way, it's all in one place and one doesn't need to go searching for half-remembered posts.

I don't like anything I have to eat off the bone. You know how some people get squicked out when fingernails scratch a chalkboard ? I get the same squicky feeling if my teeth rub against a bone or wooden spoon.
