Many cooks essentially destroy vegetables, when such produce actually has a rather striking taste palate. Cook lightly, and look for contrasting by complementary tastes, textures, and colors. Learn to pull out natural flavors (which are often quite strong) instead of relying on the meat to overshadow the meal. And, sauces and spices can count for just as much here as they do for meat dishes. Watch nutrients, though. A strictly vegan diet needs attention to balance, iron in particular. Protein is still important too, so include a variety of walnuts, pecans, beans and so forth. Good luck.
