i am recently into pleasing a man who is Vegan and being into cooking and meat and such i feel i am a bit ahead of the game then someone who was totally out there!  Any recipies you might have that make it easier are appreciated.....hey i ate that torkuky..yuck...right!

ps..i always thought vegan meant hippie dude etc..but he is a mx guy and races too...go figure!...........it is all a learning experience......breathe or is it breath....ha ha

Buy a few vegan cookbooks....and also find out whether or not he's strictly organic, as that can be yet another thing about which you have to be mindful. 

The staff at a local Whole Foods, health food store is always a good source for answers to questions about the products they carry.  You'll be surprised how easy it is to cook vegan, if you're already a good cook.

Think of all the wonderful things you can buy now, since you're not spending money on meat.  Like... chocolate and strawberries to pour all over each other.  Not kidding.  Tofurkey is vile.  Don't buy fake meat.  It tastes fake.  Buy more expensive versions of things you already like.  Better wine.

I did the vegan thing for a while several years ago. Here's a couple of easy recipes.

Cut up potatoes and 1 sweet potato into small chunks. (about dime size) Heat in a skillet and add a little salt. Cook until they are soft, turning often. (basically hash browns).  Add grated cheese and cover til the cheese melts. Serve with a little ranch dressing. (not a diet recipe!)

Slice an eggplant lengthwise (slice about 1/4 in thick). Add a little salt and let it sit for a few min on a paper towel. (this gets rid of some of the extra moisture). Add a little pesto to a skillet and a little olive oil. Heat skillet and add the eggplant. Turn and cook til it's soft. Next add a little pesto to the top sides of two pieces of sourdough bread and place the eggplant on the non- pesto side of the bread. Add a piece of mozzarella cheese and tomato slices. Add the other piece of bread and grill the sandwich in the skillet til it's golden crispy brown.

One of my favorite salads. Spinach leaves, Gorgonzola, pecans and raspberry vinagrette. YUM!  Make the vinagrette by adding a tablespoon of Raspberry jam to a jar and a half cup of olive oil and 1/4 cup of apple cider vinegar. Shake it up until the jam is disbursed. Add sugar as needed.  Add the spinach leaves to the bowl or plate. Sprinkle with gorgonzola and pecans and drizzle with vinagrette.

I used to make tofu steaks. Even my kids liked them. You take a firm tofu and squeeze out the extra moisture. Cut it into slices about 1/4 in thick. Place in a shallow baking dish and pierce with a fork. Add a mixture of amino acids ( you can get this at a health food store. It tastes somewhat like soy sauce. I cook with it a lot. It adds a meaty flavor) and olive oil. Let them marinate in the mixture for 30 min or so. Put them in the oven at 350 degrees and turn. I haven't made these in quite a while so I'm kind of trying to remember what I did-you might have to experiment a little. They come out with a nice consistency and a nice golden grown color.

I also used to make tofu burgers. I can't remember the exact recipe but I think it was tofu, miracle whip or mayonaise, seasoned salt and grated carrot or zuchinni. They were formed into a pattie and fried in skillet. They were delicious.

Oh yeah I meant to add. Check out Hare Krishna recipes. Their food is WONDERFUL. One time in Arizona we were living in an RV park and a group of Krishnas came through and stayed for a few days. While they were there they had a banquet and my son who is always making friend everywhere he goes, was invited. He brought back some of the food and it was fantastic!

If you're asking if vegans swallow; it's a personal choice! It's not un-vegan to swallow. Unless of course the...material is sourced without the permission of the supplier. Just like how one freaky vegan I know was into breast milk.

Also guys, remember, vegan means no milk/eggs/leather/etc. Chocolate and cheese are not vegan options. And most importantly, since a lot of people don't seem to realize this, caeser salad isn't even vegetarian, much less vegan. There is anchovy paste in the dressing so do not serve it to vegetarians!

But, TNstepsout, the OP asked for vegan recipes: while wonderful sounding, yours are full of yummy cheese, mozarella and Gorgonzolla [8D] : not the most vegan ingredients :-) .

just get on google. pretty easy to find stuff there
cheese and dairy stuff and chocolate and heck even some latex isn't vegan
if it's got ANY animal product in it, no matter what, it's not vegan
like gummy candy with gelatin in it
vegan = NOTHING from an animal
ooooorrr if you have a local health food store, you could go in there and ask. the people who work in those places usually have alot of experience with veggie/vegan diets and they may even be themselves
(note you don't have to buy everything there, because some stuff in healthfood stores in insanely expensive, but you know, they can offer good advice =p)

Since you're already a cook...

Many cooks essentially destroy vegetables, when such produce actually has a rather striking taste palate. Cook lightly, and look for contrasting by complementary tastes, textures, and colors. Learn to pull out natural flavors (which are often quite strong) instead of relying on the meat to overshadow the meal.

And, sauces and spices can count for just as much here as they do for meat dishes.

Watch nutrients, though. A strictly vegan diet needs attention to balance, iron in particular. Protein is still important too, so include a variety of walnuts, pecans, beans and so forth.

I really like vegan and vegetarian recipes but you have to know how strict someone's diet is. And vegan does mean NO animal products of any kind. However, some of us simply have allergies so we are careful about what we eat. Just be open minded and willing to learn about different ways of preparing food. Some of my friends have celiac disease--talk about having to figure out new recipes...geeez.

Oh I know, and you can buy some options like Tropical Source bars, but most chocolate you buy at the store isn't vegan :)
