I really like vegan and vegetarian recipes but you have to know how strict someone's diet is. And vegan does mean NO animal products of any kind. However, some of us simply have allergies so we are careful about what we eat. Just be open minded and willing to learn about different ways of preparing food. I once knew a vegan with celiacs disease....she pretty much just ate carrots.

A lot of the larger supermarkets now stock vegan foods....ours also has vegan cheese which is actually really yummy .... it is a softer type of cheese.

You may also want to check if he also prefers organic and fair trade foodstuffs.

...for extra brownie points, get a new set of pots, pans and utensils and use them only for  vegan cooking. i've known vegans who wouldn't eat vegan food prepared in a frying pan that had been used for bacon....no matter how cleaned it was.

Chocolate can be vegan.  One must read the ingredients.  Obviously milk chocolate isn't, but many types of chocolate contain no animal products.

Add the other piece of bread and grill the sandwich in the skillet til it's golden crispy brown.

One of my favorite salads. Spinach leaves, Gorgonzola, pecans and raspberry vinagrette. YUM!  Make the vinagrette by adding a tablespoon of Raspberry jam to a jar and a half cup of olive oil and 1/4 cup of apple cider vinegar. Shake it up until the jam is disbursed. Add sugar as needed.  Add the spinach leaves to the bowl or plate. Sprinkle with gorgonzola and pecans and drizzle with vinagrette.

I used to make tofu steaks. Even my kids liked them. You take a firm tofu and squeeze out the extra moisture. Cut it into slices about 1/4 in thick. Place in a shallow baking dish and pierce with a fork. Add a mixture of amino acids ( you can get this at a health food store. It tastes somewhat like soy sauce. I cook with it a lot. It adds a meaty flavor) and olive oil. Let them marinate in the mixture for 30 min or so. Put them in the oven at 350 degrees and turn. I haven't made these in quite a while so I'm kind of trying to remember what I did-you might have to experiment a little. They come out with a nice consistency and a nice golden grown color.

I also used to make tofu burgers. I can't remember the exact recipe but I think it was tofu, miracle whip or mayonaise, seasoned salt and grated carrot or zuchinni. They were formed into a pattie and fried in skillet. They were delicious.



  Cheese isn't vegan.

often, the label vegan means more than not using ingredients gleaned from animal sources when cooking.

it can mean the individual has adopted an entire lifestyle based on a vegan philosophy.
 
as has been mentioned, some vegans will only consume products or eat food that originates through organic and environmentally conscious pratices.  it is a "cruelty-free" and enviromentally responsible lifestyle that many see as not just a healthy choice, but a morally responsible one.
 
there are also those that are "Straight Edge", who go so far as to not include any pharmeceuticals(legal or illegal), casual sex or the consumption of alcoholic beverages.
 
perhaps asking him why he chose vegan and if it only pertains to his diet, might help you to be more sensitive to his needs.
