SweetSlice I got my set of scalpels, and I practiced on everything... fruit (particularly banana peels, ripe peaches, tomatoes), roasting chickens, pork, potatoes (great for learning curve techniques). I practiced with different blade shapes and paid attention to how the flesh moved/cut under different pressures. Using meat (especially meat like roasts that has a layer of fat, etc., is a good choice. CF
