I am not sure how to answer this question.

I use fresh garlic because I find that the process of making it a powder tends to dilute the flavor.  Fresh garlic is simply wonderful.

Besides which, why do they add salt to it?

I would check the ingredients on it and see what other nasties they put in it.

Just me, etc.

I don't know why they'd add salt sinergy, maybe it does something special?

Well, salt is a flavor enhancer.  Put salt on something, taste the subtle flavors better.  MSG does a better job of this, but has negative health impacts.

I imagine they are taking the garlic essence and finding something the oils will stick to, as well as putting it with something that will make one taste it better.

I would suggest fresh garlic.  Actually, it is more than that, the more you can get away from foods other people prepared for you, the more you can guarantee what you are eating contains only what you want to eat.

What I started to discover about two years ago is that food I buy in restaurants is almost never as good as food I cook myself.

The other day I was out with some friends for lunch, and I found myself critiquing the flavor of minestrone I was eating.  I pointed out that it needed a bit less salt, more garlic, more basil, and I would suggest adding a couple of jalapenos to the 3 gallons of soup since it needed a little bit of heat on the back of the tongue.

I imagine they are worried about my failing grip on reality.

ok, I accidently defrosted drumletts, but I've put tarragon, on one, dill on the others, lemon peel on some, and pressed garlic, we'll see how I like them. and how my family likes them.

Dill I didn't like Tarragon i couldn't tell any flavor, but the garlic flakes were a huge hit, not only with me but my dad. So next time Garlic flakes it'll be.
