If you don't mind my asking, and I don't want an exact location, where are you at? I used to live in the Key's.

Born and raised on the beach about 30 miles south of Hollywood, CA.

My favorite chicken is rolled in italian bread crumbs, deep fried, and then dunked in things like bbq sauce, wasabi mayo, tartar sauce, salad dressing, etc.

With a bunch of veggies it is the perfect sit on the patio and watch ships go in and out meal.

Sinergy

Mmmmm...I love to make chicken like that and serve it with a bunch of different sauces. I especially love it with plum sauce. For a yummy change use plain bread crumbs and add a healthy dose of jerk seasoning....it's really good dipped in coconut sauce. Very spicy and sweet.

He once made me wasabi salmon with grilled veggies while we watched the ships come into the harbor... omg Sinergy cooks divinely... he has been teaching me to appreciate fish, which I have not acquired a taste for. I have to say next time I go down there I think we should do fish tacos or sushi....

My youngest son is an avid fly fisherman. Every year he fills my freezer with salmon (which I like in limited amounts). He came home one day with a recipe for Salmon Tacos. I thought he was crazy. They fast became one of those favorite meals of salmon season though. Really yummy!

I marinate the salmon in olive oil, fresh garlic, fresh cilantro, ground cumin, paprika, sea salt, cracked pepper, a touch of cayenne, fresh lime juice and a dash of Tequila. The salmon is then grilled (I prefer to do it over fruit wood). Hot off the grill I shred it up and serve it on homemade tortilla shells and topped with a variety of fixin's. I like mine with lettuce, tomato, green onions, sweet red pepper, fresh Pico de Gallo and a bit of cheese. My son (and most of his buddies)...now this is going to sound weird but....he uses coleslaw, quacamole, sour cream, cheese and hot salsa.

I am still researching baja fish taco sauce.

It seems to be a mixture of mayonaise, lemon juice, mustard powder, and one other spice I am working to identify but which might be paprika.

I jones for fish tacos every week or two, wake up in the morning to go to work with a big sh*t eating grin on my face knowing I will be having lunch at the fish taco place.

By coincidence, the local faux indie paper ran this article today on multiple versions of a fish taco:

I am a southern Californian.  Baja fish tacos are a bit different than those found elsewhere, and the primary difference is the baja fish taco sauce.

Hrm, day off.  fish tacos.

I thought that as well but when I tried it...the flavor was off. Try ground chipotle pepper. Same smoke, bit more heat and the closest I've been able to come to that same flavor.

Thank you for the links, mistoferin, but I could not find any of them that dont require the use of some prepared sauce or powder.

Most of these, in my experience, have excessive salt and/or monosodium glutamate, which is either not all that great for me or I am allergic to.

Ciao!

How about garlic salt, or garlic powder? Can I use those?
