ORIGINAL: mistoferin I marinate the salmon in olive oil, fresh garlic, fresh cilantro, ground cumin, paprika, sea salt, cracked pepper, a touch of cayenne, fresh lime juice and a dash of Tequila. The salmon is then grilled (I prefer to do it over fruit wood). Hot off the grill I shred it up and serve it on homemade tortilla shells and topped with a variety of fixin's. I like mine with lettuce, tomato, green onions, sweet red pepper, fresh Pico de Gallo and a bit of cheese. My son (and most of his buddies)...now this is going to sound weird but....he uses coleslaw, quacamole, sour cream, cheese and hot salsa. I am still researching baja fish taco sauce. It seems to be a mixture of mayonaise, lemon juice, mustard powder, and one other spice I am working to identify but which might be paprika. I jones for fish tacos every week or two, wake up in the morning to go to work with a big sh*t eating grin on my face knowing I will be having lunch at the fish taco place. Sinergy
