I think political correctness is generally stupid and certainly has gone too far.
What should be judged is the intention of a statement or action not just blindly saying that a statement or action is not correct.
So when using pronouns, we should always go with what we think is right. If someone uses the wrong pronoun with, say, a transgender person that doesn't necessarily mean they are a bad person or that they want to offend, maybe they just don't know. This is completely different to someone deliberately using male pronouns with a TG female because their opinion is that it is wrong for them to be TG.
The example of the waitress who got penalised for writing "black couple" is where political correctness does more harm than good and only propogates the problem of racism. When she wrote that, it was not to be racist or cause offence, but merely to identify them. It should be no different to writing "blonde couple" or "lady with glasses". If she'd wrote "pair of n*****s", then there would have been grounds for complaint.
People today are too ready to be offended and look for it everywhere, when what they should really be looking at is the intention. If the intention is good and honest, there's nothing to be offended by nor to complain about.
