No measurements here because spring roll wrappers vary in size and you will want to change things up to suit yourself. You won't need very much of anything. For two of us I use maybe one carrot, half a cup of noodles, half a cup of leafy veg etc

You need:
-A packet of spring roll wrappers
-Cooked chicken, shrimp, strips of beef, boiled egg or tofu (a little will go a long way)
-Lettuce (dark leaf variety), spinach, kale, or the leafy thing of your choice
-Carrot (shredded or chopped very fine), peppers (cut into strips), green onion, beansprouts, or some kind of crunchy veg
-Cooked noodles (glass noodles hold their shape best, but rice or egg noodles are fine)
-Optional herbs - cilantro or thai basil if you can get it
-Optionally pretty much any other veg you like - I've seen people use avocado for example

Soak the wrappers in warm water, one at a time, until soft. Lay the wrapper out, and at one side put a little of each ingredient. Roll. Eat. Use whatever combo of ingredients you like but try to get at least one thing from each category.

Alternatively, once rolled you can brush very lightly with oil, put them in the oven and bake until the wrapper is crispy.

It might look complicated but it is really simple. You can use leftover meat chopped up, and grating a carrot or slicing some peppers is easy. For the noodles - I usually put mine in a pan, cover with boiling water and put a lid on it, and just let it sit there until I've chopped my veg, then they are ready to be drained and used.

Edit: Almost forgot to add this site has step-by-step pictures to help you roll them the first time.

I usually wrap the roll in a bib lettuce leaf. It adds a nice texture and a little more nutrition.

You don't deep fry them? I've always thought those were fried. The baked, crisped ones sound good though.

Spring rolls are not egg rolls. The rice paper wrapper would not do well in a deep fryer. Also the ingredients are usually fresher veggies and noodles and wouldn't respond well to that much heat.

I hate to be a dampener on everyone’s fun… But I suggest that rather than make a game out of your diet, you work out a eating plan with a doctor and start living healthily before your health problems really spiral out of control…

A summer roll is a nice drift from the fried or baked rolls.

No, it wasn't horrible, scrambled eggies are the one thing I have never minded having.


I'll prolly go for the bags of frozen garden grown veggies in the freezer an try to do something with them  along the lines of a salad or a side dish cuz we haven't been to the store in ages.

No, I know you don't want to  put a damper on the mood, but this is more like to try something new an open up my palet than to play games with healthy eating or not .

This OP should do a lot of things to improve her situation. Unfortunately, she's developmentally challenged and needs serious direction which she does not get from her parents (she still lives at home, though in a separate apt) or her partner (who is at least as messed up as she).

The OP periodically looks to this forum for guidance, and some of us try to encourage and support her. Since none of us is there to direct her (what she really needs), it's all we can do.

Is that the way life should be? No. In this situation, it's the way it is. If we helped her eat better for one day, or one meal, it's a gain in the right direction.

And yet Aries has a point. The OP has the ability to seemingly understand the gravity of her health status, she knows what to do, she's been coming here for years talking around the problem, and in the end always skates off without doing much only to come back and start all over again. She always wants things to be fun and easy and have it on her terms, I don't see the issue with telling her life is hard, time to knuckle down and do some work. Isn't that the serious direction you're talking about that she doesn't get?

Of course that's the serious direction she doesn't get. Which is why I told her a couple of days ago that her diet and lack of exercise was killing her.

She does not appear to have the impetus to change her life for more than a few minutes or a few days. If she did, she most likely would not be on disability for developmental issues.

As I've said more than once, she needs strong guidance and direction, even she knows that, but her life does not provide it. Neither her parents, or her partner, or any of the social service or medical people she interacts with provide what she needs. I imagine all of them are as frustrated as we are on this board, if not more so.

So what do you suggest? We give up on her? Her life has already been a study in how one nice, bright and caring human being can fall through the social cracks in our society due to being developmentally disabled. As long as she asks for help, I will try to provide it. At this point, it's no longer about her and what she can or can't or will or won't do, it's about me at least attempting to be a good citizen, when I can.

Perfectly stated!

I will cheer her on as much as I can. Her life is loaded with negativity, and I frankly feel that society failed her and owes her.

Plus, she might not be making huge steps, but I do feel that slowly, ever so slowly, something trickles through her defenses and sticks. That is worth it to me.

Using frozen garden vegtables is a good thing Chris.
They are easily accessible, are not too expensive, will fill you up, and are good for you.

You could steam them and then season with garlic, a bit of salt and a dab of butter.

And for a complete meal, you could once more pair it with some scrabled eggs, giving you a nice dose of protein.

Yer, I don't know... It's not an ideal situation all round.
The internet is a fickle mistress...
Many of the food suggestions didn't seem awesome to me... no offense all.
I advocate as little processing as possible. I actually find when I have to make my own stuff from scratch I eat less because I either don't want to make it or am trying to stretch out what I've already made... so I wont have to make more hah!

A perfect example, I use to buy a chocolate tart every week when I went shopping and have slices of it through the week for desserts, I've recently replaced that with making a sweet potato pie every week and having slices through the week for dessert.

So I'm basically eating sweet potatoes eggs and milk for dessert...

My advice is limit yourself to buying basic whole foods, fresh vegetables, lean meat, eggs, as little dairy as possible, cut out the salt, cut the softdrinks... if you need bread buy wholemeal.
That should stabilize your weight and health, I guarantee your acid reflux/heart burn will go away!

PS.. when your tastebuds change to eating like that, you can really REALLY taste the crap that goes into KFC, meat pies, etc...

You know what's ironic? I am damned near rabid with Daddy about how he should care for his health  and how he's not an I lecture him ansd do my best to help him out even though he rejects it all, an when it comes to myself, I can't get my own head out of my ass.

On my way through the kitchen I stoped by the fruit bowl an got  a small tomato to gnosh it had come strait from the garden these last few days and it was fucking fabulous to eat,
