I think most of you are on the way to having a nice meal by now. I have found the day to be a bit more complex than in normal years.

I have had to make several changes to my normal meal due to my mom's dietary restrictions. No potassium, low sodium, meals are difficult to make and still maintain most of the original flavor. Yams for instance are a no go here because they are rich in potassium and due to the fiberous nature they cannot be leached. So I made a similar looking dish for her that used carrots (soaked and drained several times the day before), a small pat of butter, some mini marshmallows and cinnamon. She will not eat turkey (but my kids insisted we must have them), so I got a small bit of low sodium ham, some pineapple, and a light cranberry glaze for mom. Mashed potatoes were drained of their nutrients on the day prior so she could eat them. Fortunately she does enjoy turkey gravy because she does make the best I have ever had and that will be her contribution to the meal. I cannot give her pumpkin pie but we did make a small lemon merangue she might like.

I do anticipate we will have turkey leftovers for tomorrow, and for me that means either soup or casserole. As that is my sisters normal day to be the caregiver I don't need to be concerned about what I have to change up to get her fed.

I like throwing everything into a pot and making soup from leftover turkey, stuffing, potatos, green beans, onions, and so on, and so forth. Its very rich and flavourful. YUM.

We're pretty simple here ... turkey sandwiches are the favorite. In a few days I'll take the bones and boil them down and make turkey and dumplings. The rest of the leftovers will be eaten in a few days.

When I was cleaning up this afternoon I boiled the bones and neck to make broth for future soup or stew. Sandwiches are for tomorrow for sure. I love a cranberry and turkey sandwich on sliced sourdough with mayo and pepper. mmm. Dang it, now I am hungry.

Freezable Turkey Oh My Gods Soup:
Broth of your choosing or thin out some pumpkin puree preferably unsweetened with water or milk and a dolop of leftover mashed potato for a thicker creme soup like consistency instead,
turkey to taste, green beans optional and I cut mine into smaller bits
add cranberry or cranberry sauce and ginger powder
with just a touch of white pepper in really fine powder form OR sage, I prefer the white sage but I live in the desert and most of you won't know the difference. Don't use both, it comes out funny and wrong with the cranberries and sweeter ingredients
pinch of salt if it's needed
Serve anytime of year with stuffing
Or fried stuffing crumbled in place of saltines

Sandwiches for a couple of days then soup/ pot pie. Pretty basic here, but we have teenagers so leftovers have a very short life expectancy in our house.

I do have a ham bone in the house(one of the kids doesn't like turkey) as well, so that is going to become green pea and ham soup. Awful for gas, but very yummy!

We don't have thanksgiving but Christmas dinner and boxing day dinner is a huge affair for the English. Turkey, roast potato and roast parsnips, mashed potato and at least 4 other vegetables. Sausage meat stuffing, devils on horseback, red jelly, bread sauce, roast chestnuts, a rich gravy and that is only one part of the meal!
We tend to have lots left over because our eyes are bigger than our bellies and what many English people do is make 'bubble and squeek', a traditional English dish.
You just chop up all your leftovers making sure there is mash potato in that (not the gravy or apple sauce or bread sauce) and combine it all with a couple of eggs before frying on a fairly high heat. It bubbles and squeaks hence the name!
I think it tastes better than Christmas dinner.

I'm cooking Thanksgiving dinner on Sunday this weekend :)

Typically we go to family's on Thanksgiving and because I love Thanksgiving leftovers, I always cook another, smaller version of Thanksgiving Dinner for he & I on Sunday, so we can enjoy the leftovers all week.

I make soup from the bones and some of the meat, and then we just have turkey/stuffing/potatoes as leftovers, like mini Thanksgiving dinners all well. Sometimes I use the turkey in omelets or scrambles, for breakfast, or make turkey wraps for lunch.

I like the idea of a casserole. I haven't done that before so I think I'll consider that this year. Yum.

I always wondered what bubbles and squeak was, thanks, I may have to try that. I have tried the sausage meat stuffing lol but anytime I mention meat stuffing people freak, being locked into the bread kind. What is devils on horseback?

Basic "bubble & squeak" is leftover mash mixed with leftover cabbage or sprouts with some chopped onion; all mixed up with an egg or two, salt & pepper to taste. Mix it well and make into small paties. Gently fry until golden brown on both sides. The egg binds it all together, the potato mash and greenery browns nicely and 'squeaks' as it cooks - hence the name.
Goes great as part of a breakfast with fried eggs, sausages, bacon, mushrooms and baked beans and/or grilled tomatoes and lightly fried bread. If done right it shouldn't be greasy.

Devils on horseback: Google it - it involves bacon and prunes [:'(]

Yep, basically you can make bubble and squeak out of any leftovers providing you have a base of mash potato.

Wrap a piece of streaky bacon round a tinned prune and bake it for 20 minutes. That is a devil on horseback. You can do the same with sausage or tubular cheese if you don't like prunes.
