What is your favorite food and/or recipe? Want to share?

I love squid, but unfortunately I haven't yet learned how to prepare it, so here is my quick and simple lemon and beer chicken.

One rotisserie sized chicken
Lemon pepper seasoning
1 can of beer

Take the lemon pepper and generously rub the chicken, be sure to get it under the skin! (If you like, you can mix bread crumbs and lemon pepper with any other spices or herbs you want and make a paste with soft butter. This can go under the skin, carefully)

Pour the beer in the pan and put in the oven. Baste well every 30/40 minutes. The lemon can dry the meat out so you want to keep it nice and moist. That's also why you want to use the whole can - more moisture is going into the meat and more steam in the oven while it bakes. But baste it quickly! Your oven will cool and you will lose steam.

When the chicken comes out your drippings make a great gravy, if you find it too bitter you can season it to your own taste. This goes great with a sweet corn side dish and fresh greens.

Don't forget to save the bones and leftover gravy! It makes a lovely chicken stew :)

I make beer can chicken doing the spice rub as you do but I open the beer can with a church key all the way around and pour out a third of it. I put spices in the beer and put the chicken ass end down over the beer can into a small square pan and cover with foil. I either use the oven or its good in the BBQ grill surrounded by charcoal or gas grill with 4 straight burners using only the 2 outside burners. Bake for about 90 minutes depending on temperature. I baste the last 1/2 hour with the foil off using 1 part beer (1/4 cup) 1 part butter, 1 part BBQ sauce, and 1part maple syrup and a bit of the spice rub into it. Yummy

Pulled pork is my favorite, and I love to make it.

In an oven-safe baking bag place a pork loin and two to three fresh spring each of rosemary, thyme, and basil. Fill the bag with orange juice (preferably not from concentrate) until the pork and herbs are entirely submerged. Crimp and roll the bag closed, place in a baking dish, and bake at 250 degrees for at least 5 hours. Once finished, drain the bag, remove the loin, and discard the herbs. Once cooled to room temperature, shred the pork using a fork (or by hand if you prefer). Put in a crock pot or a stock pot, both on low to medium-low settings. To the shredded pork add:

1 1/2 cup ketchup
1 cup apple cider vinegar
1/2 cup dijon mustard
1/3 cup brown sugar
two cloves minced garlic
1/4 tsp paprika
salt and pepper to taste

Allow to simmer on low for at least an hour, or until pork is fully heated and tender.

Awesome Baby Back Ribs is probably my most requested recipe:

      First I make a 'dry rub':

2 cups sugar
4 tbsp black pepper
2 tbsp paprika
2 tbsp ground cumin
2 tbsp chili powder
1/4 tbsp salt.

                  Mix well.........sprinkle the rub on the ribs, both sides, and gently pat/ massage the rub into the meat.  Cook in a low oven on 200* for 3 hours.  Pull out and generously baste w/ Bull's Eye BBQ sauce if you like 'wet' ribs... If not, the rub alone is outstanding!  Put in a 350* oven for approx. 20 = 25 minutes.  EnJoy!  They are truly finger lickin' good!

1-1/2 cups Oreo cookie crumbs
1/4 cup butter, melted

FILLING:
2 tablespoons plus 1-1/2 teaspoons instant coffee granules
1 tablespoon hot water
1/4 teaspoon ground cinnamon
4 packages (8 ounces each) cream cheese, softened
1-1/2 cups sugar
1/4 cup all-purpose flour
2 teaspoons vanilla extract
4 eggs, lightly beaten
2 cups (12 ounces) semisweet chocolate chips, melted and cooled

GLAZE:
1/2 cup semisweet chocolate chips
3 tablespoons butter
Chocolate-covered coffee beans, optional

Directions

Place greased 9-in. springform pan on a double thickness of heavy-duty foil (about 18 in. square). Securely wrap foil around pan.

In a small bowl, mix cookie crumbs and butter; press onto the bottom of prepared pan. In another bowl, mix the coffee granules, hot water and cinnamon; set aside.

In a large bowl, beat the cream cheese, sugar, flour and vanilla until smooth. Add eggs; beat on low speed just until combined.

Divide batter in half. Stir melted chocolate into one portion; pour over crust. Stir coffee mixture into the remaining batter; spoon over chocolate layer. Place springform pan in a large baking pan; add 1 in. of hot water to larger pan.

Bake at 325° for 60-65 minutes or until center is just set and top appears dull. Remove springform pan from water bath; remove foil. Cool cheesecake on a wire rack for 10 minutes; loosen sides from pan with a knife. Cool 1 hour longer. Refrigerate overnight.

Remove rim from pan. For glaze, in a microwave, melt chocolate chips and butter; stir until smooth. Spread over cheesecake. Top with coffee beans if desired. Yield: 16 servings.

I love to cook and I love good food. A wide variety of good food.

So, it's just whatever I am in the mood for at the moment. Right now, if I could, I would whip up a batch of Vietnamese dumplings and some pho.

But alas, I am at work.

The other day it was home made egg noodles with some left over roast chicken. This weekend it will be a sirloin mushroom thingy, I made up, over rice or noodles.

I do a lot of experimenting. I love diving into the food and cooking of other cultures. There is no way I could choose a favourite, or even one or two things I cook best. Because I love to cook, I am pretty fucking good at it, if I do say so myself.

The only thing that tends to be undependable is yeast breads/dough stuff. I did great with them when I lived in big drafty old houses. Since I've lived in a new house.....yeast breads SUCK. Don't ask me why. I am blaming the house.

Humidity levels can really affect bread dough.

I love to cook, but sometimes I am all about easy. Every time I make the dish below people rave:

a bundle (that is how they come at our market) of fresh whole green beans
one red bell pepper
one yellow bell pepper
1/2 cup almond slivers
2 tablespoons water
2 tablespoons olive oil
salt and pepper

lay out the washed green beans in a glass 13/9 inch dish, pour water over. cut peppers into narrow lengthwise sections and arrange on top. Sprinkle almonds over that. Drizzle olive oil over the top. Add salt and pepper. Cover with plastic wrap and microwave for 8 minutes (yes I said microwave).

Here is how we make grilled squid or Kalamari, my wife is from the Greek Island and this is the best I think, very simple and very tasty

If you have the whole squid, you will need to cut off the main body and pull off the tentacles from the eyes, keep the tentacles and get rid of the main body

You have to pull out the spine

I like to cut lines into it so it curls up

make sure you rinse often

Now drizzle the tentacles in Olive oil , sprinkle with sea salt black pepper and garlic toss to cover

Put them on a wooden skewer and grill over hot coals for a few minutes

Mix Olive Oil, lemon juice and oregano, drizzle over and serve with crusty bread

Sesame noodles, New York Times recipe (google) it.

I've made it at least once a month since its invention in 1975 during the great Schezuan food invasion.

I toss in some chicken to make it a meal, but if you're a vegetarian, this dish offers a lot needed richness on it's own.

You can toast up some sesame seeds to garnish with if you're feeling ambitious and want knock the prep time from 10 minutes up to 15 -or go crazy and buy a jar of black sesame seeds and just shake a handful over the top.

Some salted and drained cucumbers with a few spikes of hot oil and rice wine vinegar as a side dish make it look like you tried a little bit.

Truly, one of the great, great student-type meals, and it got me through a lot of lonely guy years too.

Cauliflower salad

2 head of cauliflower (cut small)
a green or red pepper
small onion
shredded cheddar cheese
real bacon bits to taste (kind in the bottle is ok)
2 parts miracle whip 1 part white sugar mixed together ( just enough to dress all of ingredients)

cut and mix, toss with miracle whip mixture, store overnight for flavors to mix.

Red and green pepper both look so pretty for xmas.

For a crowd, Rotisserie pork loin (I made this one up and it works really well)

1 whole pork loin (You can catch em on sale for 1.98 to 2.40/lb)
2 bulbs of garlic (not cloves dammit, whole BULBS)
About 4 T Olive oil
Dry Jamaican Jerk Seasoning

Separate and peel the garlic cloves. Poke a bunch of holes in the loin with the tip of a sharp knife and insert a clove into each hole.
If you have garlic left over, poke more holes.

Pour olive oil over the loin and then cover it all over with the Jerk Seasoning.
Let sit in the fridge overnight covered.

Cook slowly on a rotisserie until the internal temp is 160-165. Baste 2 or three times.

Let sit under foil for about an hour before slicing or it will be dry.


I have yet to try this in the smoker over apple wood but it should be awesome.

It's fairly simple (and by the way, squid is disgusting, and you are now requested to leave the planet).

Meat.

Meat is a wonderful thing.

If it swam (or has swum)....that's not meat.

Meat lives on (above) the Earth....it doesn't swim.

Meat never swims.

Potatoes added with meat...gravy and such (meat being things that don't swim....I may have covered that previously)...is a good thing.

All things that are not meat (those being things that are not above ground foraging kinds of beasts) are not acceptable as to a "favorite food or recipe" because well....they aren't meat of course.

Lookie,old sailors used to tattoo a pig on one foot,a rooster on another because they said how many times have you ever seen a drown pig or chicken.

An old family recipe for the holidays is boiled custard
1 gal milk
1 dozen eggs
3 to 3 1/2 cups of sugar
1/4 regular flour
real vanilla extract

mix milk,eggs,sugar and flour throughly and pour into a double boiler.Stir often and cook until it coats the wooden spoon used to stir it with,usually 2 to 3 hours.Here's where I cheated on my great grandmothers recipe...I use a hand held mixer to remove any clumps and make it smoother than otherwise.Let it cool then add vanilla to taste[some like more than others].Be warned...you can gain weight just looking at this drink.
