You can (roughly) divide people (kids included) into two different food preference types, those that eat darn near everything, and the picky eaters. Those that eat everything are easier to please, but with kids I think you need to factor in the desire to identify what it is they are eating. So if you give them something they identify (pizza, tacos, hamburger, spaghetti) if they like the taste, you can add lots of hidden vegetables, and they will eat it. I've personally never met a kid who would eat cottage cheese (I'm sure there are some), but you can add yogurt to many foods, from the corned bread you serve with the chili, to the 'Alfredo' sauce you prepare with pasta. I depend on nuts for my protein when I don't eat meat, so I can relate to your difficulties there. Many kids are very picky about meat. For the picky eaters, I suggest some sort of mini food buffet where they could pick their lunch that day from a variety of healthy choices. Often the picky ones *really* want control over their own food. Give them that and you've won half the battle. Good luck, this sounds like quite a challenge!
