You can (roughly) divide people (kids included) into two different food preference types, those that eat darn near everything, and the picky eaters.

Those that eat everything are easier to please, but with kids I think you need to factor in the desire to identify what it is they are eating. So if you give them something they identify (pizza, tacos, hamburger, spaghetti) if they like the taste, you can add lots of hidden vegetables, and they will eat it.

I've personally never met a kid who would eat cottage cheese (I'm sure there are some), but you can add yogurt to many foods, from the corned bread you serve with the chili, to the 'Alfredo' sauce you prepare with pasta.

I depend on nuts for my protein when I don't eat meat, so I can relate to your difficulties there. Many kids are very picky about meat.

For the picky eaters, I suggest some sort of mini food buffet where they could pick their lunch that day from a variety of healthy choices. Often the picky ones *really* want control over their own food. Give them that and you've won half the battle.

Can you do sunbutter as a peanut butter replacement? Sunflower seeds are neither nuts nor peanuts...


We would love to, that is what many parents use, but the costs are out of our league. Peanut butter we get by the gallon from USDA.

We do the old southern staple of shredded carrots with raisins and a little bit of a mayo/wine vinegar dressing. It goes over quite well.

White bean salad w/ flaked tuna, hard boiled egg, olive, salad greens in vinaigrette.
Things stuffed into pitas.
Pizza bagels.
Chicken teriyaki and rice.
Spaghetti and meatballs.
Some sort of low fat, mostly vegetable lasagna?

Kens salad dressing raspberry vinegrette (sysco or us foods I forget has gallon jugs)
Most markets & all walmarts carry personal size to taste

Things got the 4 boys (3-13 to eat easily)
-Fall muffins- usually blueberries or apple in carrot or zucchini base
-sun butter & fruit
-tortilla bake (healthy & gf) corn tortillas, refried beans, mexi blend cheese, cream cheese for sweetness & left over chicken, fajita beef or taco meat (with fat drained off) the only must with the is rotell tomatos with the juice (keeps moist & prevents sticking)
Layer like lasagna & top with lettuce, tomato & cold cooking cream

-spaghetti squash mixed with pasta. Adds nutrients & sweetness
-carrots & ranch
-cut fruit especially wedge watermelon
-raisens on a raft
- apple sauce cookies
-oatmeal raisen
-indian corn (pan roasted can corn with peppers, onions & butter)
-baked corn (forgetting ingredients)
-chicken tetrazzini
-Lasagna always a hit & vehicle for ground veggies
-cheese burgers (ground veggies as natural binder)
-Stir fry veggie rice (use gf soy sauce)
-waldorf chicken salad
-tuna sald with grapes
-hot dogs always a fave
-pulled pork sandwiches
-sweet potato fries
-veggie fries with dip (corn meal breaded match stick fried veggies)
-brownies like ground apple or zuchinni as bulk
-apple tart/ bar
-seasonal cobbler
-french toast
-eggs on a raft (cut hole in bread center, fill with egg & fry) best with a cinnamon raisen bread
-tater tot hot dish
-shepards pie
-more but these are biggies coming to mind

If your hobart has a grinder attach$ent, making your own fresh from SHELLED sunflower seeds isn't hard

I've met several kids who love frozen peas. Just plain old frozen peas. They eat them out of a bowl with their fingers like they're M&M's. (Weird-ass kids.)

I still won't eat it. To me it's like little wads of tissue paper soaked in milk.

One of things I love...chicken salad with apples or grapes.

My Mom's parents lived next door and I had plenty of lunches there.  Grandpa loved CC.  Ate it with a drizzle of honey. ("The more sugar you soak, the sooner you'll croak.")  Guess I was one of those kids ChatteParfaitt never met. LOL!

ETA: I keep it in my fridge for snack insted of ice cream.  Carrots are right next to it, especially in summer.

To get back to topic, serve a small bowl for dessert with fresh fruit on top - drizzle of honey for sweetness.

Meatless, but healthy?  5 or 7 layer salad - beans and tomatoes and so on.  Easy to make in hotel pan.  Serve a scoop with chips on the side.
