I love to slice cukes and vidalia onions, add some cherry or chunked up tomatoes, and marinate in the fridge over night in Italian dressing. It keeps for several days and is delish!

Blend 'em with ice and a bit of honey/sugar, plus some mint if you've got it, and you've got yourself a cucumber cooler!

(This makes more sense when you remember that they are cousins of the watermelon.)

Why not the classic solution, make pickles.

Brine with some Alum to conserve crispness and add some dill. Soak for a few weeks then put in mason jars with vinegar. Dill pickles.

Vinegar, salt, sugar, put in fridge for a few days then put up in mason jars... bread & butter pickles

If you like spicy pickles, put a hot pepper or a garlic bud or two in the mix.

ETA: By the way, has anyone said sliced thin and eaten with sriracha, or dressed with rice wine vinegar and sesame seeds? Or in a salad with tomatoes, black pepper, and cilantro?
