I've actually wantd to start one of these for awhile now.
I claim to hate cooking, but if you promise to keep it a secret I'll confess...I do enjoy it a little bit, but only because I'm a fucking fantastic cook ;)
I'll start with something easy
So, here goes:

Drunk Chicken

ingredients

Enough pieces of chicken WITH SKIN to serve to however many guests you're planning.
i.e. 4 thighs for 4 guests.

1/2 stick of real butter
1/4 sliced thin red onion
4-6 cloves of garlic, minced
1/2 cup of any cheap white wine, according to your taste preferance (dry or sweet or whatever)
1tbs of any mixture of Italian herbs, fresh or dry, doesn't matter.
Salt and pepper to taste

optional: 1 cup of fresh mushrooms, sliced


Start with 1 tbs of butter, melt at a low temp in a skillet on the stove, when the butter starts to bubble and smell "nutty" add your onion and garlic. Simmer until the onions just begin to turn opaque and the garlic just barely begins to brown. Salt and pepper the skin side of your chicken pieces then add them skin side down to the pan. Salt and pepper the upside of the chicken and simmer for a few minutes until the skin starts to brown a little bit. Turn chicken over and repeat, omitting the seasoning part. When both sides are browning, pour your wine directly over the chicken and sprinkle the Italian seasonings over the entire dish. Cover the dish and let it simmer on a medium to low heat for about 10-12 minutes then turn and repeat. The skin should be well browned and the onions and garlic should be almost dissolved.

While you are waiting for your chicken to cook, make a fresh salad tossed with Italian dressing and some garlic bread...maybe a side dish of green beans or asparagus.
Once your sides are done and your chicken is firm*, you're ready to plate and serve....enjoy ;)

(*to tell if chicken or pork is done, make a tight fist with your thumb on the outside, press down on the skin between your thumb and first finger with the backside of a fork....now do the same to the meat, if the firmness matches, your meat should be cooked through and ready to eat...any firmer and you've overcooked)

Use any cut of chicken you prefer...breasts work ;)
Jusst need to have the skin on when you cook it (for flavor) you can skin it after it's done cooking.

I hate to cook. Yes I know I asked for vegetarian recipes lol. I am only doing so because when I buy food already made or at a restaurant, I don't have the opportunity to know what exactly is in all the dishes and so I end up just buying a salad.LOL So it's back to probably back to doing more cooking. Master is probably going to be trying some new vegetarian foods in the near future. HAHA. It will be interesting to see what comes of that.

For each diner, place one lean, trimmed steak in 1/2 cup Marinara sauce in a glass baking dish just the right size with cover.

Bake at 325 until the steak begins to disintegrate. Time varies, depending on the steak.

Enjoy with rice baked alongside in another covered glass dish. Note that rice does not take as long to cook.

Wine is recommended.

Here's a real simple and inexpensive meal to throw together on the fly.
It also tastes really good as a leftover meal, so Lucy, pay attention!

1 box Penne Pasta. I usually buy the mini variety.
1 jar Ragu Alfredo sauce with roasted red peppers.
1 pound Shrimp. I buy it already cooked and deveined, etc.
I also chop a few green onions and slice extra roasted red peppers for flavor.

While the pasta boils, warm up the sauce and shrimp in a medium skillet.
Once the pasta is cooked, drain it and add it to the skillet, and mix it all together!

Since I don't like shrimp, I'll sometimes substitute with chicken tenderloins
cut into bite sized portions. Ragu also has a Habanero Alfredo which is yummy!

Hehe I'm Italian...Ragu is a bad word in my house. But that sounds like it would be delish with home made sauce!

BUT I do already have a premade (by me of course) sausage and penne dish in the freezer waiting for my shorty to reheat it for me sometime next week. I also have a meatloaf ready to go and if all else fails, they will be eating a lot of pizza (I can have salads)

And I did convince my 21 year old daughter to come for 2 days next week so I will only be on my own for 1 of them. Mr home for M&T, no one here for W, Daughter here on Th&F, then Mr home for S&S...by the following Monday I should be ok to cook I hope. And I have the 10 year old here to help with lifting and stuff, as long as I don't do anything in the oven that I won't let him handle we should be ok ;)

Ragu is a NO in my house too, but have you tried the Buitoni stuff, Lucifyre? The pesto is excellent! And you can get a preroasted chicken from the grocery, some sauce, and fix it the same way of Poise's penne.

Nope, but I've tried Newmans and Bertoli...those are both *ok* but nothing special. I like the Bertoli sundried tomato alfredo though...I use it for a kind of cheater dish with premade lobster ravioli from Publix I add scallions, mushrooms and thin sliced red onions and thin sliced red peppers with fresh minced garlic and butter...omg it's a rich dish. Hafta serve it with a salad to balance out the richness.
Probably 1000 calories per serving too LOL...it's yummy tho.

I don't like Newman's anything. The Bertolli frozen stuff is okay. I am surprised at the Buitoni stuff, everything I've tried is good, which is very nice, since I can cook once for two meals. When the family is out of town I turn into a 20 yr old bachelor for some reason, and I need all the help I can get.

Yea, I use the bertoli frozen meals for two when I'm feeling lazy. My favorite one is the shrimp and asparagus...I add a little lemon and garlic to it for a little kick.
