Other than strawberry rhubarb pie, what do people do with rhubarb? Mom has a plethora. Her patch is over 20 years old and keeps expanding.

Tonight, I used the sauce from this recipe over already cooked chicken and rice and will try it as written the next time I have pork chops or maybe over chicken thighs:

Spiced Rhubarb Pork Chops

Ingredients

1 1/2 cups chopped fresh rhubarb (1/2-inch pieces)
1/2 cup chicken broth
2 tablespoons sugar (I decreased to 1 T and it was plenty sweet)
1 tablespoon honey
1/2 teaspoon ground cinnamon
1/2 teaspoon ground ginger
1/4 teaspoon ground nutmeg
4 (3/4 inch thick) bone-in pork loin chops
1 tablespoon vegetable oil
salt and pepper to taste

Directions

1. In a saucepan, combine the rhubarb, broth, sugar and honey; cook over medium heat until rhubarb just starts to get tender. Stir in the cinnamon, ginger, and nutmeg.

2. In a large skillet, brown pork chops in oil. Sprinkle with salt and pepper. Pour rhubarb mixture over the chops. Cover and simmer for 35-40 minutes or until meat juices run clear, turning once.

Love stewed rhubarb. Mum used to cook it for us - and Dad fed the rhubarb old cowmuck as fertiliser.

Strip the thickest veins from the stalk, cut into one or two inch pieces. Put in pot , add sugar and water to barely cover the rhubarb. Simmer until softened. The rhubarb should be very soft, and almost fall apart.If it isn't sweet enough, add sugar.

I love it warm with heavy cream, or ice cream. Yum!

and lucky you for having access to fresh rhubarb.....

strawberry rhubarb jam. i always nick a jar from my mom when i visit her and slather it on toast.

i've yet to get the recipe from her.

eta: my mom wouldn't appreciate being called an 'it'[:D]

My only dealings with rhubarb...

1. Take said rhubarb
2. Hide said rhubarb or sneak onto plate of brother or sister
3. Ask for extra ice cream as rhubarb has now gone

I have never had rhuburb as a savoury meal addition!

My exposure to rhubarb has been either alone or with apples (or strawberries), pureed and served with custard or icecream.

Grandma had a patch and each year, we had lots of pies.

This year, I am seeing if anyone at the farmers market is carrying it. I miss having that pie.

It's botanically a vegetable but since it's most commonly used as a fruit, counted as a fruit for the purposes of regulations and duties.

Rhubarb might be a favorite pie plant, but it suffers from an identity crisis. Sunset's "New Western Garden Book" describes rhubarb as an "uncommon vegetable" that's used as a fruit in sauces and pies. Joy of Cooking is even less polite, saying "Only by the wildest stretch of the imagination can rhubarb be included in this [fruit] chapter, but its tart flavor and its customary uses make it a reasonable facsimile, when cooked, of fruit."

As a kid we would eat fresh rhubarb right from the garden with a little salt on it. I used to love the stuff. I haven't eaten though since I was a kid.

We always made rhubarb pie, jam, and rhubarb cobbler.

I am one of those persons who eats just about anything: raw oysters, snails, you name it. But I don't eat rhubarb; the very smell makes me nauseous. A very nice old lady of my acquaintance once made me a rhubarb pie, convinced if I had it properly prepared I would change my mind. I took one bite (for politeness sake) and nearly hurled.

Rhubarb is one of those things you love or you hate !!

That is exactly what happened to me - rhubarb pie, one bit, instant nausea. If I even get a whiff of it I'm suddenly queasy.

I made Rhubarb Relish from the Joy of Cooking. I'm trying to decide what cuisine it would go best with. It feels like a chutney, so I'm thinking Indian.

For now, I put the relish over the jasmine rice I had with salmon with a soy/ginger glaze and broccoli. (M had eggs and toast. Maybe if I puree it he'll eat it [:D])

Rhubarb Relish

Combine in a medium saucepan and bring to boil over high heat:

    2 C diced rhubarb
    1/2 C sugar (I used 1/4 C)
    1/3 C fresh orange juice (I used all the juice from the orange I zested)
    Grated zest of one orange
    1/4 C red onion
    1/2 t chopped fresh ginger
    1/4 t ground cardamom
    1 jalapeno pepper, chopped and seeded (I used seeds)

Reduce the heat and simmer until the rhubarb softens, about 12 minutes

That is the only rhubarb recipe I have ever seen that seemed interesting...thanks for the recipe..Seems like a chutney...I am still not going to buy any rhubarb...ha ha

My Mom used to make chutneys out of things like rhubarb (or gooseberries, too), but I don't have any actual recipes. But I'm sure if you took any general chutney type recipe, you could adapt it to use something like rhubarb. Certainly can be used with Indian food, but good also just as an accompaniment to roasted meats, or as a sandwich spread.

When I was growing up my neighbor used to make rhubard cobbler. We would put a scoop of vanilla ice cream on top of it while it was still warm. Yumm. I don't cook it though. My family thinks its too weird

Apple & rhubarb muffins are pretty tasty.
