Meat glue in restaurants should be outlawed because it is both deceptive and a food safety concern unless the meat is cooked to well-done.

When meat glue is used in canned meat it is labeled "formed" - but no one is expecting high quality meat in Dinty Moore Beef Stew anyway. (And why they'd have to glue stew meat escapes me but here it is.)

Restructured steak

Restructured steak is a catch-all term to describe a class of beef steaks made from smaller pieces of beef fused together by a binding agent. Its development started from the 1970s. Allowed food-grade agents include:
- Sodium chloride (table salt) and phosphate salts. Salt can prevent microbiological growth and make myosin-type proteins more soluble. The allowed amount of phosphate in end products is 0.5% in the U.S. It increases the emulsification of fat.
- Animal blood plasma
- Alginate: Sodium alginate forms an adhesive gel in the presence of Ca2+ ion.
- Transglutaminase: an enzyme that helps the forming of cross-binding proteins.

Problems

Oxidation and food poisoning are the two most serious issues generally associated with restructured steak. To reduce the risk of food poisoning, restructured steaks should always be cooked until well-done.

I saw this earlier and all I could think was....I'm happy I watch the guy at the locker cut my steak and I cook it at home.

While I agree that the idea that they are gluing pieces of meat together is nauseating, I question that they are using stewing beef to do it. Stewing beef is cheap meat and very tough if you don't cook it right. I doubt that anyone wouldn't notice the difference between that and a fillet.

Discounting the health concerns of contamination and the chemical properties of the glue... dear people, if you can't taste the difference between the two, all that remains between eating prime rib and stew beef is your own misguided vanity.

My goodness, I certainly agree with you a lot when we're not in P&R :)

I think it's more a case of - "unless glued onto another piece, this bit of filet mignon is too small for anything but stew" than "this was originally stew beef shaped to look like filet."
