To make up for no salt, I would use lots of fresh herbs and celery, which has sodium, but not enough to alarm this dietitian.

Quinoa has gone up in popularity and supply is not yet meeting demand. To reduce the per pound cost, Mom and I split a 25# bag. Being unprocessed, the whole grain is healthiest, but you can also buy quinoa "pasta," which I use for squash-a-roni, which I am not recommending for your friend due to the 3 T of miso. (2 t miso = 480 mg sodium.)

Here's lots of quinoa recipes: http://allrecipes.com/search/default.aspx?qt=k&wt=quinoa&rt=r&origin=Recipe%20Search%20Results

Maybe some Biggest Loser recipes? http://www.biggest-loser-recipes.com/

What is the Biggest Loser Diet? This is a low-calorie diet based on the Biggest Loser
pyramid of 4-3-2-1 (four servings of fruits and veggies; three of lean protein; two of whole
grains; and one "extra")

LadyC,

Nice to see you posting here again.

Here is the information you need.  These links are to the
blog of a medical librarian.  Happy Healthy Long Life,
A medical librarian's adventures in evidence based living.

Her profession is doing health research for doctors and other
medical professionals.  And she gives the references for what
she says.  She provides links to the actual peer reviewed research.

I am giving you 2 links, the first is her report of 15 months of
following the plan laid out by Dr Caldwell Esselstyn for heart health.

This link is a recent one full of recipes
http://www.happyhealthylonglife.com/happy_healthy_long_life/recipes/

I am afraid by refusing to eat salads and greens he is choosing a bleak
future for himself.  But after you make the information available then it
is his choice to make.
