Seriously, check out Rose Elliot's web site and cook books. Skeptics will be pleasantly surprised if they give it a try.

I happen to love chili and couldn't imagine it without some kind of meat. Now I love to make and eat various versions of vegetarian chili. One thing about veg cooking is you can improvise and substitute freely and it still comes out yummy. For an amazing flavour, add some dark chocolate to the chili. Yea, I said chocolate.

You'll also be doing our planet a solid .

P.S. Serve it with corn bread. Add corn kernels to the batter. Very easy , cheap and fast.

I'll give you the rest, but inexpensive? The price of fresh veggies has been going through the roof over the last few years...

Moon, that's because in the US much of the produce is imported. That's a fucking shame. 'specially since there are lots of Mesicans willing to pick it but are hounded by moron politicians. There is a growing trend to farmers markets selling locally produced, um, produce.

Or, he'll, grow your own. If you live in a big city, grow a vegetable garden on the roof, fer fucksake.

US supermarket produced is, um, produced for looks rather than taste. If its not a perfect looking zucchini , cute, whatever, it's left in the field to rot. What is in the markets has no taste. Sucks.

And durability as it often has to ship thousands of miles. The bananas I ate in Costa Rica were ambrosia compared to supermarket bananas. I've never had a supermarket peach come anywhere close to a locally grown peach. Don't get me started about out-of-season tomatoes.

That isn't just a US thing, Charlie: the distributors over here have been hiking the price and dropping the quality of fruit and veg as well.
