Take one, then if the other opens, quit the first one. For goodness sake, dont turn down a job on the hopes that you will be offered the tech job. What happens if they dont offer it to you?

In this job market you owe no employer anything.

First take the job in hand for security.

Second go to your interview and if offered that job tell them that if possible you need to give a 2 week notice on your current job.

If possible I would take the job that I believe I would enjoy working at if the benefits were close.

Better one bird in the hand than ten in the air. Them other ten birds you can shoot later.

Take the certain job. It will make you more coveted by employers, so it will increase the chance of a later successful solicitation for the jobs that you desire. Think long term: grow slowly, but surely.
