i forgot i had my slow cooker in the house vs. out in the shed. =p now i'm all about it and want to make something tasty.
who else enjoys using slow cookers? have any recipes to share?

even though i'm a vegetarian, please feel free to share any recipes -- others are meat eaters and might enjoy, plus i like to modify meaty recipes anyway. =p

Let's see... my roommate (at the time) made a buffalo chili... it cooked for 10 hours... Let's see if I remember (most of!) what went in it...

1 lb of buffalo meat (expensive, but well worth it!)
1 Onion, chopped
2 large cans of baked beans
1 Can Sloppy Joe sauce
Cinnamon, Sugar, Cayenne Pepper, Ground Cumin, Salt, Pepper (to taste)

Put all ingredients in slow cooker and cook on high for 2 hours, then cook on low for another 8 hours, stirring occasionally. Add more Sloppy Joe sauce (or water) if it starts getting too thick.

I can't remember everything that was put in it, but this was almost everything. I'm not a big chili fan, but I ate 3 bowls after it was done!

Homemade soups with lots of veggies and yes lol meats.  But just cut up in chunks so maybe you can pick them out easier, if you can eat the taste just not the actual meat.

Sorry, i don't know recipes lol though i am sure i can find some, but on the low carb boards i am on, soups are a big winter slow cooker concept because they last, chili also (yuck lol), stews also would be great especially with winter coming soon.

if i eat something cooked in meat, i'll get heinously sick. =p
but i can substitute something else for it.
stew and chili and roasts are what i've mostly done with mine. i never did get around to trying the slow cooker baked potatoes. =p

Oh wow, that sucks -- well not if you don't like meat lol.  I have a slow cooker, but never can decide what i want to make in it, i guess i will have to just suck it up and do it one day.

I need to get some of those slow cooker liners though because i HATE cleaning the damn thing.

liners have been out for years Ladies.

And tofu is a great substitute for meat... just add it at the end.

tofu's okay as long as it's extra-firm, or has been frozen, and then pan fried to make it even firmer.
otherwise i use it in applications where i'm not expecting any meaty chewiness.

portobello mushrooms can work well. quorn is also great.

and of course seitan, but with possible gluten issues, i have to minimize my intake of that until i figure all this nonsense out.

this is meant for a LARGE crockpot, but I mixed it up in a stock pot, and froze what wouldnt fit in the crockpot:


9 can chili

1 lb hamburger (or not, Lilly...LOL)

1 lg onion, diced
1 can tomato sauce
1 can plain diced tomatos
2 cans diced tomatos w/ garlic & onion
2 cans Ro-Tel mild (salsa?.. I'd be able to tell you if I was looking at a can of it.. it looks like Ro-Tel products are avail. at Bakers)
1 lg can EACH of: black beans, pinto beans and white beans
1 pkg (sm) of shredded cabbage

set on low, for 6-8 hrs, stirring occasionally.

I like stews and soups.

A great vegetable soup is wonderful on a cold day ( which is coming up here soon)

A head of cabbage
then any other kind of veggie you like
toss in some potatoes if you like
my dad adds ground beef sometimes.
i like lots of onions
water chestnuts are great for a bit of crunch
i cant make it without carrots
lots of tomatoes
corn, peas, onions, celery
let it slow cook

yummy

its even better the next day and the next day and the next day

My favorite crockpot cookbook: The Gourmet Slow Cooker: Simple and Sophisticated Meals from Around the World

Some of the recipes are unnecessarily fussy, but I follow my normal protocol of following the recipe verbatim the first time around then modifying it subsequently. While I do have a spice grinder and whole spices, I have no qualms about using powdered spices.

For vegetarian recipes, the Irish Cheese Pudding and Chocolate Chip Cookies were big hits at work.

Beef Biryani is a good way to use cheap cuts of steak.

Beef Burgundy is so much easier than the traditional version, as is Chicken Mole, however, my Mexican coworker has since sold me on mole paste.

Those of you who enjoy cooking with wine will find lots of good recipes. Chicken Cacciatore is one of my favorite crockpot dishes.

Here are two recipes but they are for the meat lovers.

Pot Roast

Boneless chuck roast (frozen or thawed)
1 envelope dry italian dressing mix
1 envelope dry brown gravy mix
1 envelope dry ranch dressing mix
carrots, potatoes, onions, mushrooms and green beans if you like them

Drop the chuck roast in the pot, add chopped veggies. Mix 1 1/2 cup of water with dry mixes, stir very well. Dump in pot. Turn pot on high and cook for 6 hours if thawed. On low and cook for 8-10 hours if thawed. Basically, I start this at 7 am on low, and let it cook all day until the meat begins to fall apart, and I am starving from smelling it all day. I sometimes add a bit of red wine to the pot for flavoring.

Short Ribs

Beef short ribs (thawed or frozen)
Bottle of BBQ sauce
Water or wine-aprox a cup.

Stir the liquid and BBQ sauce together, add to the pot, add meat. Cook for 6-8 hours on low until meat is falling apart. You can serve this as sandwiches, or over rice/potatoes, however you choose.

Slow cookers are great for cooking beans of all kinds...I like this re-fried bean recipe..I add a ham hock but the recipe is meat free and then mash them on the stove and add some olive oil.

As I type this the pet is off checking a ham he has in the slow cooker...he loves ham. I would rather it were a roast. But seeing as you like veggies I am going to throw this one out there. It is a fav of the familys.

4 medium tomatoes, chopped
2 medium potatoes, peeled and cubed
2 cups halved fresh green beans
2 small zucchini, cubed
1 medium yellow summer squash, cubed
4 small carrots, thinly sliced
2 celery ribs, thinly sliced
1 cup cubed peeled eggplant
1 cup sliced fresh mushrooms
1 small onion, chopped
1 tablespoon minced fresh parsley
1 tablespoon salt-free garlic and herb seasoning
4 cups V8 juice

Put all of the above in a 5 qt cooker. Cover and cook on low for about seven hours(or until the veg are tender) pepper and salt(if you can have it) to taste. Very easy and very good on a cold day. The great thing about this recipe is you can leave out or add things that are to your personal taste.

Grandmother used to say the great thing about a crockpot was you just tossed things in it and somehow, as if by magic, sooner or later they turned into food.

haha quite true :) it's magic!

that is a really tasty-sounding (reading?) recipe, and most of it is stuff i tend to buy anyway, so that makes it very convenient. ^_^

--kalikshama, that book looks really interesting; i kinda stopped buying recipe books because i figured "oh i can find plenty of recipes online" -- but the convenience of sitting in the kitchen and looking through them is gone if i hvae to go scour the internet away from the kitchen where i can easily check and see what i have.
so i'll have to rethink my position on books. =p

--tazzygirl, i ♥♥♥ cabbage soup, but this is a different recipe than i'm used to, so i'll definitely have to try it, thanks!

--GT, rotel and black beans = hooray! that sounds pretty awesome. i could leave the meat out or put a replacement in instead. :)

--mnottertail -- i don't think bean pastes would have the same texture/"chew factor" that seitan has, especially since i tend to make seitan really dense. that's one thing that veggie foods sometimes lack is a satisfactory "chew." =p
