You guys zucchini'd me into it.   I bought a couple at the store and plan to play around with a squash, zucchini, pasta tonight for dinner.

Take the squash (especially zucchini).
Feed it to a steer.
Repeat all summer.
EAT the steer.

Tonight's experiment came out GREAT.   It was a combination of things suggested here and my style of cooking.....

1/4 Large onion cut into wedges
1 large squash cut into strips with seed removed
1 large zucchini cut into strips with seeds removed

32 oz diced tomatoes (canned)
1 tbs flour
1/2 tsp salt
1/2 tsp seasoning salt
1 tbsp italian seasoning
1 pinch dill weed
1 tsp dried minced garlic
1 whole bay leaf


I steamed the fresh vegetables to a little firmer than the texture I like.

I combined the steamed vege's and everything else in a pot.    I have a grill rack that I use to set the pot off the stove eye when I want to cook really slow and warmed it for 4 hours without letting it come to a simmer.

I served over linguine and it's fabulous.
