Pasta with chopped up veggies (tomato, green pepper, squash, zuccini, onion, garlic and eggplant) cooked in tomato sauce and just a touch of meat. Oven "fried" potato wedges with Italian seasoning.

Your pasta dish sounds yummy fluffypet..I was on and off seeing a vegan guy before I got back together with my Master after 11 months and learned to cook some vegan dishes..i wish i could attach photos here I made this one pasta sauce with firm tofu that was really yummy but I am a meat person myself but can go either way for certain meals. oops forgot the second dish...I oven fried in olive oil some baby yukon potatoes cut in half yesterday with some spike seasoning ( I can smell the curry powder in this spice available at the grocery store) and a bit of pepper...so mine were a bit different but I love those too..i added carrot sticks too! How about Vietnamese shrimp spring rolls?

Yes, shrimp spring rolls Grilled Shrimp and Zucchini skewers marinated in garlic, chopped parsley, olive oil, bay leaf, lime juice and thyme.

(Sorry, i don't have a recipe - i used to eat it at a Mexican (not Tex Mex) restaurant in Tulsa, OK - Chimi's on S. Lewis across from Oral Roberts University. Raisins were in the poblano pepper with the chicken and cheese. The sauce over it had raisins, too. The relleno was dipped in beaten egg whites and fried.) Yes to the calzone. Well I have never to My knowledge met an Appalachian apple stack cake, but it sounds divine. Big chunks of potato cooked with pieces of kielbasa sausage and chives from My garden in olive oil
