Oh well batted! I'd have done oysters Kilpatrick (which I love), but still a good call

For my dinner I made some Focaccia, and my best ever Laksa - I've really got that one nailed now

I love focaccia and oysters kilpatrick too, I just have an addiction to rockefeller sauce, probably the sambuca. ;) I have made kilpatrick before outside on the grill which enhances the bacon or pancetta really nicely!

Laksa....I have never made it. I don't really care for curry but aren't there are few different ways to prepare it? Like some more vietnames "pho" types of noodle soup laksa or am I confusing it with something else? I seem to recall something with prawns too?

Ah you use Sambuca in it? Interesting - when I've seen it done before it's been with Pernod or Ricard, which are less sweet.

And yes, I've done BBQ Kilpatrick before now - lovely! Although I like it best with really good quality fatty smoked bacon, rather than pancetta.

A few?! It has so many different variations it's a bit like saying "cullen skink" or “pizza”; the more usual forms are rice noodles on the bottom of the bowl, together with stir-fried prawns and chicken (and, as per tonight, a little pan-fried firm tofu and halved baby mushrooms too), with beansprouts and sometimes beans as well, all smothered in a rich, fiery, coconut & stock "broth", the spice base of which is similar to Thai red curries.

ETA: Chunks of Thai aubergine are often added too, but I didn't have any of those to hand. When used though they soak up the broth wonderfully. I may try chunks of normal aubergine instead next time.

I've been searching and experimenting because I recall a wonderful one I used to have in a tiny little place just off Adelaide market when I lived there for a while some 20 years ago. And tonight, after 2 months of faffing about with this and that, I found something that seemed (to my memory at least!) to be every bit as good. Fiery hot, but with a wonderful richness (not just heat) to the broth, and letting the flavours of the prawns, chicken, beans, mushrooms shine through, while flavouring the tofu beautifully.

So I'm well chuffed :)
