I'd say health care or possibly something in the hospitality field. Hotel/motel management. hard to outsource either of those.

The courses I was taking allowed internet research, but these were mainly history, especially art history, and some of the applied sciences.

Actually my area has a nurse shortage. But we have to consider the types of work the OP would want to do.

As a manufacturing engineer there is a great deal of diversity in the field. Most of which I am not currently qualified for. That is why I want to get more schooling in that field. As for nursing at any level, I have neither the patience (no pun intended), nor the desire, and most nursing positions, with a 2 year degree, don't pay all that well.

Hello, MasterG2kTRI recently went back to college after 25 years of being away from it, my choice was to not take the online classes. I felt that I would learn more and do better face to face with the Professor. I will admit it took me a few weeks to get acclimated. I was feeling out of place (most everyone was much younger ) and certainly feeling over whelmed with the work load at first. ( I'm taking 15 units)I can offer you a few tips that really helped me out. The first thing I did was find a study buddy. I found someone who was taking the class with the intent to learn something, rather then being there because they were forced to be, or coerced into it by their parents.The second thing is learn how to take proper notes, focusing in on the important things the Professor was saying. Flash cards or post-its work very well too. The last and final thing I would recommend is to purchase a hand held recorder. This has been invaluable to me. You can either record what the Professor is saying in the classroom and re listen to it again at your leisure, great if you have short term memory.. I mostly use it for studying for tests. I record the questions and answers and when I have time like when I am working out or in the shower or perhaps driving some place, I will listen to it over and over again, this allows me some free time to do the paper work that needs to be completed as well. Good Luck to you on this journey, it's not easy, but extremely self rewarding!

A C.G. buddy of mine's wife is a Nurse-Practitioner and she's been studying on-line for her doctorate in nursing. I don't know if she can do it all on-line though.
