...how do you cook them? I have a background in French cooking, and the only thing that i know that i assumed was similar was wilted spinach....but i was beyond mistaken when i tried that last night. any tips?

Domi is all about the greens. Seriously, we had some last night.

When I say "we" I mean DG and the cunt. Allegedly they were great!

You could get kicked out of the club for admitting you don't know how to cook greens. But since it's your birffday I thought I would chime in here as well.

I looked at several recipes and this po' piece of southern white trash lady seemed to have caught the essence of what needs to be done. I am confident that she stole the recipe from some black folk so don't shoot the messenger or feel bad about using some old and dried up pasty crackerz' recipe..

Also it doesn't have to be one type of greens. You can utilize turnip, mustard or any other greens that your lil' nasty heart desires.

I shall stop by to sample your greens and then tap dat ass.

Not everyone uses pork. Most self respecting colored folk do tend to swing that way and I happen to agree with them. However, I have had some tasty greens where beef or smoked turkey were introduced to add some flavor and fat.

We must have had a hundred posts here from someone who just got "collard" or wants to be "collard"...and someone always points out that "collards" are greens. This is the first post I've seen of the opposite though. Cracked me up!

Collards are best cooked long and slow with garlic and some kind of cured pork. Think cabbage not spinach.

I throw them on the top of a mostly cooked pot of brown rice, say the last 15 minutes. Less is more IMO when cooking vegtables.

I prefer turnip greens over collards. I used to make literally gallons of turnip greens during a brief stint at Sundown Cafe on Cheshire Bridge in Atlanta. (work/study for my BS).

Simmer w/ lots of butter. Drain. Return to pot, add chicken stock and and some ground chile de Arbol. Season to taste. Serve (with cornbread, is my preference).

Sure, you can use something else besides pork, smoked any kind of meat.  I would start cooking the meat first and let it start to tender up before putting the greens in.  Some people like just a touch of sugar in them too (along with salt and pepper, of couse)

Collard greens are best eaten when warm! There is nothing better than greens, pinto beans, corn bread and buttermilk! Now that is a meal for a king or Queen!
