One team tries to create favorable matchups and exploit them, the other team makes adjustments to negate the mismatches but in doing so exposes themselves to other mismatches, and it goes on the entire game, play by play by play. It's like a chess game, or actually 11 chess games all going on at the same time. I'm not much of a fan, but to me most of the fun is watching the constant adjustments. It's truly fascinating when you understand a little bit of why they're doing what they're doing.
