Italian Meatloaf Recipe Ingredients
• 1 pound ground beef (leaner is better)
• 1 4 ounce can mushrooms (reserve juice)
• 1/2 cup dry bread crumbs
• 1 large egg
• 2-3 garlic cloves
• 1/2 teaspoon salt
• 4 center cut bacon strips
• 1 teaspoon dried parsley
• 1/2 teaspoon oregano
• 1/2 teaspoon basil
• 1/2 teaspoon thyme
• 2 tablespoons dry bread crumbs
• 1/2 onion, finely chopped
• 1 cup mozzarella cheese
• 1 8 ounce can tomato sauce



Preheat oven to 375 degrees. Add water to mushroom juice to make 1 cup. Fry bacon until crispy, drain and crumble. Set aside.

Combine beef, 1/2 cup breadcrumbs, egg, mushroom juice, garlic and salt in a large bowl. Mix well. On wax paper, form meat mixture into a 8x12 inch rectangle.

Sprinkle meat with parsley, oregano, basil, thyme and 2 tablespoons of breadcrumbs. Spread bacon, onion, mushrooms and cheese evenly over meat.

Roll meat into an 8 inch wide loaf. Place meatloaf into an 8 inch glass bread pan or glass baking dish.

Bake for 60 minutes. Pour tomato sauce over meatloaf, and cook for an additional 15 minutes.

Let meatloaf sit for 5 minutes before slicing and serving.

I'm drooling after reading pixie's recipe, but I usually make a pretty simple meat loaf, and there isn't an exact recipe, but I'll try....

About 2 lbs ground beef
1 large onion, chopped,  Or 2 if you like more.
1 green pepper, chopped
1 or 2 stalks of celery, chopped
1 egg (for moisture, to hold it together)
Dried bread crumbs till it makes the right texture....about 1 cup or so?
Salt, pepper, garlic powder to taste.
Mix it all well and form it into a loaf shape.
I pour ketchup thickly all over the top and spread it around evenly, then bake at 375 for about an hour or till done. The ketchup makes a glazy kind of coat on top.  Check the center for pinkness.

I add things depending on my mood and what's in my fridge I want to get rid of, like mushrooms, shredded carrot, etc.  Anything goes at my house, consider yourself warned :)

Mine is less a recipe than a process.  Pixie's sounds tasty except for the mushrooms.  I'm allergic to mushrooms.


2/1 ratio of hamburger to country sausage
eggs, as many as is needed to bind
instant oatmeal flakes, softened in a bit of liquid if needed
ketchup, worchestershire, thyme, sage
a couple of onions
a head of garlic

Dice up the onions and garlic, mix the rest together and moosh it till it's all a fairly homogenous blob. 
I'll usually make enough to do a couple of small loaves, and a big batch of meatballs.  I'll bake everything
in a 350 oven till they're brown and crispy.  Having cooked meatballs in the freezer is such a wonderful feeling, because I know there is always something tasty available.   I don't usually add extra salt to things, figuring people can salt to taste at the table.

GM, I make mine in a deep cassarole dish. This was a recipe my uncle and I came up with when I was a teenager.

I don't have a recipe persay. I just dump some ground beef in a bowl with some sauteed onion and garlic, mix in some ketchup, mustard, worcestershire, salt, pepper, basil, parsley, eggs, oatmeal and whatever else I am in the mood for.......mix it up and bake it.

For me, the quality of the ground beef makes all the difference. I am picky about my cows. And, the sauteeing of the veggies is absolutely required. I HATE crunchy veggies in my meatloaf.

2 lbs. lean ground beef
2 eggs, lightly beaten
1/2 cup milk
several slices light bread (approx. 4 or 5)
2 pkgs. McCormick meatloaf seasoning mix
2 jars pizza sauce
1 lg. onion, finely chopped
Sprinkle of garlic salt

Soak dried bread in milk and immediately mix all ingredients except one of the jars of pizza sauce. Once it's mixed, shape into a loaf pan and bake approx. one hour or until completely cooked through. Drain grease and top with other jar of pizza sauce and a sprinkle of garlic salt. Continue baking until browned. Simply delicious!!!!!

1 half lbs lean ground beef
1 half lbs ground turkey
2 eggs
2 garlic cloves
1/2 cup diced white onion
24 whole wheat saltine crackers, smashed to bits
1/2 cup bbq sauce

Mix the ground beef, turkey and crackers together, blend thoroughly. Mix in the eggs and blend as well. Mix the remaining ingredients and bake for 1 hour at 350 degrees. Top with extra bbq sauce or ketchup prior to serving.

Any amount of meat, ground
Two level cups battery acid
One cup number 1 fine gravel
Seven grains gunpowder

Mix all ingredients in an explosionproof container wearing safety gear including thick rubber gloves and goggles. Add cyanide and arsenic to taste. Bake in nuclear reactor running at 80% capacity four as long as you can stand it. When done slice with plasma cutter and serve. Garnish with red sticks of dynamite.

It's to die for.

Mustard Meatloaf

2 lb hamburger
2 ea eggs
1 medium onion, diced
1 each 8 oz can tomato sauce
(garlic to taste)
2 tsp dry ground mustard
2 tsp Mediterranean oregano
1 tsp white pepper
1 small Serrano pepper , chopped
1 tsp sea salt
1 – 1 ½ cups crackers, crushed

Preheat oven to 375º

In large bowl, combine eggs, diced onions, tomato sauce, garlic, dry mustard, sea salt, oregano, white pepper and Serrano pepper. Once mixed, add crushed crackers.

Crumble hamburger and add to moist ingredients. Knead hamburger until all ingredients have been folded in.

Place meatloaf in ungreased 9” x 5” meatloaf pan and cover pan with foil.

This is a dense meatloaf so bake at 375º for 2 hours. Remove foil for last 30 minutes of baking time.

Come on CM, we can do better than this. Lame and boring thread. y'all have the desire and the free floating animousity for it, You seem to lack the creativity.

I think you lack the gonads for a real fight. How many eggs per pound of meat ? Once the Alpha Chef is chosen then comes the rest. What is the best filler ? Breadcrumbs, rice, ground potato chips ? (don't discount the last one no matter the heath issue, it is muthafuking GOOD, and even better for breading).

And what of rice ? Some people use rice. They are a foreign, strange alien species to me but I have had their meatloaf. Two seperate instances, in one the rice was precooked and was quite flaccid. In the other case it was not precooked and was quite al dente'.

This basic shit has not even touched on seasoning. Yes the recipes provided are good, some different styles, but that is the point. On CM here this should have been world war three, but with nineteen posts in about twenty some hours nobody has insulted another even once that I can clearly see. Not one has had to or been asked to provide cites or quotes.

And what kind of sauce ? I'll kill the next MF who puts ketchup on my meatloaf. Simple tomato sauce is fine, in fact with some sort of fryed noodles it can be great. But ketchup just does not work here.

So then we can now segregate into several groups. Just center the issues, like the manipulators of society have always done. There are three isues I can see.

1. The use of ketchup. This should be enough to knock the entire internet on it's ass.

2. Red gravy or brown gravy ? This issue could end the world right now.

3. If I just don't like you, I don't like your meatloaf.

Now between all that I would expect to see about 11,597 responses in a day. What is everybody still sleeping off that turkey dinner ? I know I am. I mean really, every time I wake up it's fucking reality again. Can someone do something about that ?

Meat loaf is what it means I think. You like it how Ma made it then talk to her while you can. Find out. You can do so many things as well. What would you call the big chunk of ground lamb mixed with all kinds of spices and shit rotating around a vertical spit ? Gyro meat. It is just a different kind.

So seemingly simple, by an issue like this we could tear each other apart ! Then we can go into ravioli, cabbage and pepper stuffing. The shit is the same, meat, eggs, this and that. But..........

Now the olman, before he gave us his exodus in rear, contrived an idea. He had already mixed sausage into a stuffing for things that was supposed to be groundmeat. Later he found these special peppers with ALOT of flavor, and stuffed them hot Italian sausage and baked them up in salsa. This was a very strong flavor.

I loved it. I thought it was one of the best things,,,,,,cubanero peppers, that' what it was.

But what I am saying here is that in a meatloaf or whatever, isn't that the same thing ?

Think of it. Your sausage is really a spicy as hell meatloaf encased in something that really, you don't want to know what it is. Really, if you do know what it is, don't tell the others. It is good for us nutritionally, as are hotdogs for the same sort of reason.

At any rate we need the speculists in here. I made up that word and I say it mean the people who quote each other, pick apart the words, provide links to snopes or who the fuck knows.

This could well be the longest running thread in the world if we try. Just be yourselves. Being enough of a matter of personal taste, it is truly unresolvable. Isn't this what we live for ?
