Just a quick tip. For those that don't enjoy the "gamey" flavor that is associated with venison, you can use vermouth in your marinade and it does a great job of covering it.

Mmmmm.... I will soon be killing a friend that I have made over the summer, it won't be a surprise as I have told this buck every day that as soon as I legally can I will be harvesting him.

This thread got me to thinking about some of the possibilities for that menu I mentioned earlier - and I went looking for possible places to get uncommon meats if I can't connive.... er... umm... Convince (yeah, that's it, Convince!) the guys to donate meat for that particular dinner.  What I found was a link to this wonderful place that ships various types of game ... venison, buffalo, elk, various poultry types (including duck, goose, quail, pheasant), aligator, antelope, and several others....

While it's been a bit since this thread was actually active (so much going on in the past week and a half on these boards)..... I thought I might give yall a lil update regarding the place I posted a link to previously.
 
I got my order in today (on time as expected) - however, my order was Short by 4 pounds of meat.  I'm waiting to hear back from the company, as I got an answering machine telling me they couldn't come to the phone when I called to get it straitened out.  Either way, right now they either owe me $50 or 4lbs of venison that's already been paid for and the shipping paid for as well.  Frankly, if they opt to send me the meat that they shorted me, they'd damn well better volunteer to overnight it at their expense to make up for their blatant fuck up.

take two pounds of cubed venison, dust with salt, black and cayenne pepper and leave to one side, roughly chop two onions and fry in butter until soft, crush and chop four cloves of garlic and rub into the meat, drop the meat into the onions and butter and lightly fry, turning for about twenty minutes, then put the lot into a deep saucepan or stewing pot and add a tin of tomatoes and a good belt of pepper sauce,  cover and cook on low heat for an hour. I have no name for it, but it goes with anything.

Well, the guy just called me back.  Their mistake, and they're shipping the rest of my order at no extra charge along with an extra pound of venison stew meat on Monday to make it up to me.  I won't kvetch about a company that's willing to fix their own screw up in such an amicable manner.
