Good day to all.

yours truly has run a household for many years.

I need some advice here

I just am getting better NOT from my famous black outs- but from a. bad meat.
Ill spare you how awful it was.

What I need is ideas to clean up my food storage system..   How to clean to steak pan. Maybe I am doing something wrong.

I use a 4 cubic feet fridge.  At times I catch the door ajar- and my big solution is to prop a chair to it.

Meanwhile that freezer is full.

The meat did seem abit iffy.  When I fried it up.

So how do I tell bad meat?

How long can I store it?

What meals can I quickly throw together when nothing is in the house?

Any ideas an kitchen cleaning.  I dont have bugs or rats. I thought I was doing well.

Anyhow  how would I sabnitise this frying pan?

Any hints are welcomed on behalf of us helpless males that can barely throw together a dinner.

Oh I tend to not plan at all. With this meat I thawd  it by putting the pakc into water. then got destracted and it sat in the fridge maybe 14 hours

Can you put a latch on your fridge?
Most meats freeze well for 3-6 months, meat in the fridge I try and cook or freeze within 3 days. If I'm freezing it, then I mark it on the outside of the package that it was thawed for x days before freezing it.

The steak pan, if you have a dishwasher that should be hot enough to sterilize it. I'm not exactly sure what a 'steak pan' is so I can't offer cleaning suggestions.

General cleaning, I use a bleach/water mix in a spray bottle on my counters. I also use baking soda with lemon juice if there is 'crud' but that doesn't sterilize, just clean.

Check the temp inside of your fridge, remember that the door shelving is the warmest area. Condiments only in that, don't store eggs in the egg bin!

Ok - I can make the fridge colder. 

2. turn up the hot water. Both I went easy on due to budget.

3.  it is not the baking soda that done it.

The pan is old...it has the no stick.  I guess I should shell out some cash for some a good pan. I have a glass pan which is nice....tho not big enough for say 1.25 steak.

I almost never cook chicken even tho I like it......

For a fry pan - maybe get a new one.  Cast iron is best (my opinion).  With a new pan, throughly wash it, then season it.  You season it by coating the pan with cooking oil and then baking it in the oven at 350 degrees for about 45 mins to an hour.

never heavily scour your pan, and if you do ... you may want to reseason it.

I hadnt heard of seasoning the pan.

interesting.

Thinking of houses in the world- amazing more people dont get sick.
You have the folks who live perfectly then the medium, then the downright sloppy. Im in the middle.

so then- meat should be  redder maybe when it goes into the pan.

eating out isnt an anwsere.  places use ingrediants that I wont. I can control what I eat better this way. A good examply is high fructose syrup,  and oil similliar to PAM.  I cant digest PAM.

I bet things do taste better with a decent pan.

now the stuff left in the freezer to decide on it.

use canola oil for seasoning the pan- it withstands the highest temperature of all cooking oils - it's also perfect to keep meat from sticking to your gas grill

edited to add for seasoning the pan

Lard or bacon grease is better for seasoning cast iron. Vegetable oil has a tendency to turn into a sticky gelatinous glue.

Prop up the front of your fridge so it leans back so even if you leave the door open by accident, it will swing shut with gravity. If it has the magnetic strip that goes around the outside of the door, make sure it is clean so it gets a good seal.

my best advise is to keep little in this kind of fridge. 
considering canned food lacks taste and nutrients many times your best bet is to
buy what you need on your way home, dont buy more then you'll eat. 
eating out is way too expensive for a day to day option.

Typically washing a steak pan using dish soap should do the trick. If the pan is extra greasy or burnt you can use something called bar keepers friend or an sos pad as long as the pan isn't teflon. If it is teflon I think it's best just to toss the pan.

As for meat I usually follow this rule. If I buy it from a grocery store instead of a butcher three days max unless it's frozen immediately upon arrival home from the store. If I buy it from a butcher it's usually pretty fresh and it can go a bit longer. PAY ATTENTION to expiration and sell by dates from the store. If it's close I wouldn't take any chances. Meat usually has a distinct smell especially hamburger when it's starting to go bad.. then again I have a very sensitive sense of smell.

Pasta dishes are fabulous and quick when you have nothing in the house, you can typically make stew or soup the same way. Just throw everything together. It's easy to make a broth or cream sauce or even a marinara sauce (if you have crushed tomatoes, tomato sauce etc..) Meatloaf works the same way. Potatoes too. (scalloped potatoes, french fries, mashed potatoes etc..)

To clean and this is just personal preference I love those kitchen sprays that use bleach or even fantastic works well. They sanitize and clean all at the same time. Clorox makes bleach wipes if you aren't doing heavy cleaning and just wiping things down. Swiffer is the best thing EVER for cleaning a floor. Ajax or comet which come in powder forms also work well.

You can always make things in bulk on the weekend. Lasagna, potato soup, meatloaf..( all those things are easy) and freeze them and just pull them out of the freezer and pop them into the over during the week. Sloppy joes are really simple and there are plenty of food products like hamburger helper and cambells that have boxed meals were all you have to do is add meat.

Easy recipe for any meal: Fritatta
Melt butter on medium-high in 12-inch nonstick skillet. Add any veggies and/or cooked meat (beef, chicken, ham, anything) you have around and sauté until veggies are tender (zap raw potatoes in the micro first until soft).

Reduce heat to medium-low. Add 4 -6 eggs, depending on the size of your pan. Cook for 10 to 12 minutes or until eggs are almost set.

Heat broiler. Wrap handle of skillet with aluminum foil. Broil 4 to 6 inches from heat for 3 minutes. Top with cheese; broil 30 seconds or until cheese is melted. Cut into wedges.

If the surface on a non-stick pan has become scratched the coating can actually start to come off in small pieces and stick to the food.  This alone can be enough to make a person sick besides the things that may be sticking to the part with no more coating.  It is best to throw the pan away.

I also have a small refrigerator and have to be very careful with my food choices because of that.  If it is possible for you to pick up a few groceries a couple of times a week it is easier.  Then meats don't need to be frozen but eaten within approximately three days.  It is better to defrost meat in the refrigerator if you plan ahead.  It isn't hard - it just takes forethought. 

Keep the refrigerator clean.  Throw out anything that seems iffy, including old condiments such as salad dressings that may have been in there for a year or so.  Watch your veggies to make sure that they don't start liquefying.  Set up a day of the week to take a quick look through and get rid of anything you don't feel you can trust.

Most people can smell when meat is bad.  If you have a pet, try giving them a small piece.  Most cats and dogs won't touch a piece of meat that has gone bad.  (Isn't 100% reliable but I have done it when I was unsure about hamburger.  If my pet wouldn't touch it I knew that I shouldn't either.)

You mentioned your freezer was full.  If it is too full, it hinders the circulation, so you might want to make sure there is enough room for it to circulate.  You really need to make sure that fridge door stays shut.  Food going from cold to warm to cold again can make you sick. 

Buy the smaller jars of mayo and the like as you won't use as much as a bigger family and they can get old.  Nothing grosses me out more than going to a bachlor's pad and seeing three years old mayo... ukkk!  After learning about meat... I wash all my meat, even hamburger.  If it feels slimy... I toss it.  Better safe than sorry for sure.  Watch out for meats on sale, they are typically the older meat.  Freeze once.  If it has been frozen and you defrost and can't cook it, don't re-freeze it!  Cook it or toss it.

When cooking any meat, I change my fork or whatever often.  One for raw, one for almost cooked and one for cooked.  I never use one that I used with the raw meet. And use a different utensil for each thing you are cooking so you don't transfere anything from one thing to the other.  Use different cutting boards for each thing to be on the safe side.  Walmart has a thing that can hang on the wall that has four different cutting boards, plastic, that is space saving, light weight and very handy and cost less than ten dollars.  You also want to sanitize cutting boards and can use a little bleach for this, even the wood one's.

You can add a bit of bleach to your dish water if you don't have a dish washer and that helps sanitize.  When washing dishes, I always go from the cleanest to the dirtiest and change my water often.

Have you thought of using a crock pot?  I love them as they can make a lot of work into nothing at all and you can get a great meal with little fuss.  I love my George Foreman grill as it is big enough to suit our needs and very handy.  I grill up some fish or chicken, add a baked potato from the micro wave and a veggie and mmmmmmmmmmmm.  In and out of the kitchen in half an hour.  Just remember, if you are watching calories, the microwave will double the calories.  Don't ask me how it does that, but it does.  They had a news report on it some years ago and I don't know a link that would prove that.  I know it's true becasue when I was sick I used it a lot and gained weight and as soon as I stopped using it once I heard that, I stopped gaining and lost the weight.

Respectfully, this isn't true.  You'd have to be creating energy (in the form of calories) and all a microwave does is "vibrate" the water molecules to generate heat.

Okay, didn't know my day included some research but in doing the research I found some interesting things.  Pro's and con's to the microwave for sure!  From what I read and skimmed through, a lot depends on what you are cooking, what you are cooking the food in and on and on.  The microwave does changes things in the food from what I saw, but how... and to what degree, danger and what it all means... well that is rocket science to me!  You decide... lol
