I hate soy products...soy milk, tofu, tempeh, etc.   I keep trying to convince myself that I like them because they do have beneficial health aspects, but I just don't.  I like rice milk much better.

I am fond of tofu in Chinese dishes and in Japanese miso soup.  My mother cannot drink cow's milk so she uses soy milk in her coffee and cereal.

I don't mind soy in miso soup, and I'll have a soy latte once in awhile if milk just "feels" too heavy.  I love edamame.  It's one of the first things I ask for when I go out for Japanese food.  I haven't had any poor reactions to it.  And I hope I don't!  I love that stuff.

My sister is allergic to soy products and will break out in eczema pretty badly from it.  One of my brothers is also allergic.

Depends on the product.  I love tofu, especially in hot and sour soup. 

My daughter doesn't eat meat, and she recently got me in to dry roasted edamame.  It has no fat, no carbs, and very high protein.   It's great for snacking on or throwing on top of salads, and things like that.  At first it seemed like a poor substitute for salted nuts or something, but it sort of grew on me. We keep a bowl of it on the kitchen table all the time.

I used soy milk to help with hot flashes and severe mood swings  and lack of sleep  after a surgical hysterectomy... given a choice of premarin or soy would much rather have the soy ...plus does offer benefits for cardio health and osteoporsis  which are common problems post hysterectomy... there is concerns about possible increased breast cancer  but  that risk also exists for premarin, but other problems with premarin includes stroke and blood clots and well can cause cardio problems if taken long term.  it appears that the soy cancer health risk comes from quantity consumed,  recommended safe and beneficial amount   of soy milk is 1 1/2 cups a day.    

My son as an infant had significant digestive problems, back then soy milk formula was prescription only and became his only diet till he was a year old as he could not hold down other foods and definitely did not cause any lack of development if any thing farther ahead mentally and physically ,   my friends son was born 2 months earlier same weight and a little taller and my son outgrew him within 6 months and was walking sooner. 

I am by no means a health fanatic or vegan and sure as heck I am not going to give up meat for tofu burgers  and I don't view soy as some miracle food  for example with my dogs I refuse to feed them any dog food that contains soy unless there is no other choice lol ...much to my vets horror if he tells me a dog need to go on a prescription diet..as he will have to pull out every brand of prescription diet he has so I can read the ingredient list before deciding which one is the least offensive to me... for example Hill's W/D prescription diet which is around 30% peanut shells(alternate name cellulose) which has no nutritional value and is   used to increase the profit margin  inorder to make some shareholder happy.

I tried "white" soy milk once thinking it would be healthier.  It was horrible, no matter how I tried to doctor it up.  Chocolate soy milk is a little better, but I went back to real milk.  Recently I switched to organic milk, which I like.  I think it tastes a little bit fresher, but it might be all in my head.

I don't mind tofu in Chinese or Thai food.  I tried some tofu/portabello mushroom burgers recently though....also horrible.  Even my dog didn't like them.

I've had Soy milk in coffee and cereal, not bad really.

I drink soy milk daily.  It has many additional benefits that cows milk doesn't have.  Plus it isn't as harmful to you as cows milk is.

Although, beyond a soy nut..its only milk for me.  Nothing additional soy...I've tried peanut butter...it's just not for me.

I started drinking soy milk (yummmmm) about a decade ago because I can't stand the taste or mouth-feel of cow milk. It was hard to start but since I love cereal I stuck with it and came to genuinely love it.  Soy cheese I don't like, but tofu I do. My favorite brand for soy milk is Silk, they make vanilla (and a light version), unflavored and choccy. They also make coffee creamer and yogurt. Unfortunately soy isn't something good for me after all that work to like it. It messes with my auto-immune system and I've cut back to about half a gallon per week ( I need dat Kashi cereal!). Now that cow milk is actually better for me, I just can't freaking stand it. Cheese, ice cream and all that other stuff is fine, but cow milk is a hard limit for me.

Soy took care of my hot flashes. Unfortunately it interfered with my thyroid. So I'm off it and flashing again.

I believe the Japanese ferment the bean prior to consumption to remove its estrogenic properties and can't help but wonder if there's a connection between the consumption of this bean, which makes its way into many products, and the increase in gynecomastia. I have also read of studies indicating a reduction in libido in men that regularly consume soy-based products.

And while I myself do enjoy things like miso and tofu, I have to wonder if the prevalence of soy in the marketplace is driven by the manufacturers that have a need to do something with the excess protein products they get in producing soy oil and other such items.

Is the interest in soy truly health driven, or instead driven by corporations trying to find new profit streams for what would have been waste?

It's a mixed bag at best. They say children should not be given soy products as it can cause allergies as stated above. It is feared that exposure to soy too early in life can cause allergies to legumes and other things like peanuts also.

Any more opinions?

It's swings and roundabouts. A lot of products I purchase contain some soy in them, these are just basic items and so it must be a very cheap alternative to whatever they have replaced it with - so clearly that indicates corporate greed.

The health food shops charge much higher prices for this b/c they are just capitalising on people's naivety and our endeavours to lead a healthier lifestyle - but are we healthier b/c of it?  The studies indicating an increase in gynecomastia as well as allergy-related health issues suggest otherwise.

My sub does the cooking, and he's the vegetarian. I'm patient cause he's still learning the art of cooking.
All I can say is...the cat is pretty fussy. And even HE is fooled by the soy product into thinking it tastes like meat.
I'm not- which is why I keep slipping the soy to the putty tat, so I won't hurt My sub's feelings (how could you punish someone for feeding you and trying so hard?) lol

If you're trying to substitute it for red meat...what do you think is the healthier choice? Hormone-injected cows or soy (if you have no allergies to it)? You choose.

Try picking up one of Madhur Jaffrey's vegeterian cookbooks -- fantastic stuff, and little or no soy. Beans (for protein), mushroom (for taste), and cheese if you like it are usually better-tasting than soy if you're veggie. Except maybe for some tasteful tofu cubes in stir fries.

Trying to do "fake meat" is the bane of vegetarian cooking.

I am a former vegetarian/vegan, I now eat meat, albeit minute quantities but mainly eat fish on several occasions throughout the week. Any meat I do buy is organic and comes with the guarantee that it is not pumped full of the antibiotics/hormones cattle for the general market is, which is likely why organic costs so much more. Even back in the day when I was vegetarian, I didn't want to consume anything that was a substitute for meat, as such - Bacon flavoured vegetarian rashers, what the hell is that all about?
