Is there any other seasoning you can use besides pepper? I am a huge anti peper, anti spicy person because even simple things like ginger or pepper put my mouth into agony.

4 boneless, skinless chicken breasts
ground black pepper
1 (8 oz) sour cream

Sprinkle the chicken with pepper to taste. In a large non-stick
skillet that has been sprayed with non fat cooking spray, cook the
chicken breasts, covered, over med. heat for 4-5 minutes. Turn the
pieces over and reduce the heat to low. Put the sour cream on top of
the chicken and in the middle of the pan. Cover and continue cooking
for 4 to 5 minutes or until completely cooked and the chicken is white
all through. The sour cream will absorb the pepper flavor.

Try some of the mustard sauces, or many of the other great marinades out there.

Not a fan of mustards either LA. However, yeah there are other marinades I could try. Do you do it along side of the sourcream, or instead of?

The basic recipe, chicken cooked with sour cream, could easily use dried herbs in place of the pepper. I suggest herb du provence oranother mixture of that sort.

Feline, I would use some chopped green onion or some dill weed in that.

FelinePersuasion -> RE: Creamed peppery chicken, sounds great but I dislike peper (6/13/2007 9:00:36 PM)

mist, that sounds so good.

It's a pretty basic recipe. I love the flavor of dill. If you are a fan of ranch you could add some powdered ranch dressing too. Cilantro and lime juice would be another good combo to add.

I do the ranch dressing mix with olive oil on fish and then sprinkly with bread crumbs and bake (though dill is always a good choice too)

But who am I kidding- Erin is the cooking queen of CM.

Ranch is my all time favorite thing to put on chicken and vegie's and potato's Daddy jokes I'd even put it on icecream, but that's going a bitt o far for me.

Thanks LA....but somehow I think that if I am ever deemed worthy of one of those special titles under my name here, it won't be anywhere near that nice...lol.[:D]

Garlic, and green onion... perhaps capers.

From a cooking standpoint, the sour cream holds the spice onto the skin until it heats up, then melts into the skin and transports whatever spice you use into the chicken skin and perhaps the chicken meat, while giving it a bit of sour cream flavor.

Having said that, why dont you replace the pepper with spices you do like and see how it works out?

The trick with cooking is to take what you know and like and monkey with it until you make a combination that works out.  Be prepared to fail, but be prepared to make magic happen.

I am not  a fan of sourcream in this manner.  I got nothing for you here. However, there is a herb that is quite decadent and rich and there are several recipes for sauces, and such and that is tarragon.  There is a recipe up at BonAppetit.com for a shrimp dip that uses it. It so rocks, and it has, if I remember correctly, a portion of sourcream.  Too much tarragon is a bad thing, I think. That might be a spice to check out.

I have used sour cream.  I have used butter.  I have used oil, olive and otherwise.  I have put spices in bread crumbs.  I have used egg.

All of these add different flavors to it, but from a technical standpoint, they all stick the spice to the chicken while it cooks.

My favorite is probably butter and lemon and garlic.

I love lemon. I like Lebonese chicken. Which is marinated in it.

Pandamonum -> RE: Creamed peppery chicken, sounds great but I dislike peper (6/13/2007 10:07:04 PM)

Let me backtrack. I don't like lemon sodas, or in my ice tea or lemon vodka or anything like that. But I love to cook Greek and Arabic food and I love how lemons brighten food.

My favorite chicken is rolled in italian bread crumbs, deep fried, and then dunked in things like bbq sauce, wasabi mayo, tartar sauce, salad dressing, etc.

With a bunch of veggies it is the perfect sit on the patio and watch ships go in and out meal.

If you don't mind my asking, and I don't want an exact location, where are you at? I used to live in the Key's.

Mmmmm...I love to make chicken like that and serve it with a bunch of different sauces. I especially love it with plum sauce. For a yummy change use plain bread crumbs and add a healthy dose of jerk seasoning....it's really good dipped in coconut sauce. Very spicy and sweet.

I'm not a big breadcrumb fried person,, I like infusion. It sounded cool when I wrote it.l
