You probably won't be able to find out what grade stainless you have. Some of the lower grades can develop slight corrosion in anaerobic environments, but that shouldn't happen as you're describing it. Do try to keep the metal clear after cleaning the leather and you should be OK. Fabric might be your best bet for stainless storage: wood will gas out. Don't forget the leather gases out too, so your storage, whatever it is, needs to breathe a little to let the tannins get out. There's not much you can do for the chain besides polishing and eventually replacing it. That grey you see is the zinc oxidising. Chrome does the same thing, just more slowly. Good luck,
